Pistachio FAQ

 

Q. How many calories are in pistachios?


A. A one-ounce serving of pistachios contains approximately 164 calories.

 

Q. Is there such a thing as pistachio butter?


A. Yes. Peanuts and almonds aren't the only nuts that get blended into a delicious spread.

 

Q. Are pistachios good for road trips?


A. Yes, but don't buy them at the first convenience store you stop at for a potty break. Too expensive.

Pistachio Brittle

 
 
Mix things up with this Pistachio Brittle - a delicious alternative to peanut brittle!
 
 

Prep Time: 15 minutes 

Cook Time: 25 minutes 
Total Time: 40 minutes 

 

Servings 1 pounds of brittle
 

Ingredients

  • 2 cups granulated sugar
  • 1 cup water
  • ½ cup light corn syrup
  • ½ teaspoon kosher salt
  • 2 tablespoons unsalted butter
  • ½ teaspoon baking soda
  • 3 cups roasted, salted pistachios (16 ounces)

Instructions

  • Line a rimmed baking sheet with parchment paper and lightly coat with cooking spray; set aside.
  • In a medium saucepan, combine the sugar, water, corn syrup and salt. Bring to a rapid simmer over medium-high and cook until deep golden, about 20 to 25 minutes. Remove from heat. Stir in the butter, baking soda and pistachios (the mixture will foam). Continue to stir until the mixture is no longer bubbling and the caramel is smooth, about 1 minute.
  • Transfer to the prepared baking sheet and spread with a rubber spatula that has been sprayed with non-stick cooking spray. Let cool until firm, about 15 minutes. Break into pieces. The brittle can be stored in an airtight container at room temperature for up to 3 weeks.

I actually bought pistachios recently!

 

For this:  (but I haven't made them yet)....from cookingforkeeps     .com

 

I also think you could use @ChiliPepper recipe for the cin rolls...but use this combo of the filling.  (in case puff pastry isn't your thing)

 

Baklava Cinnamon Rolls

  • 1 3/4 cups raw and unsalted pistachios (optional use combo of walnuts & pistachios)
  • 1 tbsp cinnamon
  • 1/4 cup packed brown sugar
  • 1/4 cup + 1 tbsp white sugar
  • 1/2 tsp maldon salt (flaked) **optional
  • 2 sheets puff pastry, thawed
  • 4 tbsp butter, melted
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 1/8 cup honey

Instructions

  • Place a rack in the bottom third of the oven. Preheat oven to 350 degrees. Butter or grease a quarter baking sheet or 9x12 baking pan with non-stick spray. 
  • Add nuts, brown sugar, 2 tablespoons white sugar and cinnamon to a food processor. Pulse until the nuts are finely chopped. 
  • You want mostly very small pieces, but also a few bigger ones. (See photo). Add salt and pulse one more time. You don't want the salt to be broken up! 
  • Slightly roll out each sheet of puffy pastry on a lightly floured board or surface. Brush each sheet with two tablespoons of butter. 
  • Evenly sprinkle the nut and sugar mixture between the two sheets. Roll up jelly roll-style. Cut the very ends off of the rolls, so you have an even edge. 
  • Cut evenly into 16 equal rolls. 
  • Place the rolls, nut side-down in prepared baking dish. Bake until golden brown and cooked through, about 25-30 minutes. Keep and eye on them and make sure they don't burn. 
  • While the rolls cook, make the syrup. Add remaining sugar, water, honey and lemon juice to a small sauce pan. 
  • Bring to a boil and reduce to a simmer until thickened, about five minuets. Set aside. 
  • When the rolls come out of the oven, let them rest for 2 minutes. Pour the syrup on top. Serve after a few minutes. Can also be left at room temperature for a few hours.

@RespectLife I have made Baklava the labor intensive old fashioned way through the years, but this sounds EASY and DELICIOUS!!!😁 I will definitely put this is my dessert files! It will make a great summer dessert!👍

@ChiliPepper I have never had pistachio brittle, but LOVED peanut brittle when I was younger! This interesting twist sounds like something I would try.😊👍

I haven't either but the recipe fits the "day" LOL!!!

 

I have made peanut brittle pretty much the same way & it's easy enough. you just have to be careful because it gets HOT!!!

 

I like pistachios but they are kind of expensive but I think I will try maybe a half batch of this just for fun.

 

Plus, it kind of goes with our "St. Patrick's Day" theme don't ya think - color wise anyways???

There was a long ago poster @adoreqvc who used to post the most wonderful Greek inspired recipes.

 

She was very helpful to me when I made her recipe for baklava!

 

This seemed like a fun take......I am aiming for this weekend!   LOL
