NOVEMBER 2024 RECIPE GAME

[ Edited ]

Well here we are my friends, time to get ready for the Holiday Recipe Marathon!  Now please remember this is a long distance race so pace yourself, stay hydrated and stretch often . . . hopefully out on the couch with a hydrating beverage . . . Smiley Wink

First up is my favorite holiday, Thanksgiving.  Such a wide variety of mains and sides to choose from so please share your best of the best (and if they incude sweet potatoes I would consider it a personal favor).  Many thanks to our friend @walker for giving us an open playing field by letting us chose the next ingredient:

Oven Denver Omelette

8 large EGGS

1/2 cup Half and Half

1 cup shredded cheese

1 cup chopped ham

1/4 cup chopped green pepper

1/4 cup chopped onion

Whisk EGGS and cream; stir in remaining ingredients.  Pour into a greased 9" square baking dish.  Bake at 400 degrees for 25 minutes until golden on top.  Test center with knife to see if set.

Re: NOVEMBER 2024 RECIPE GAME

Crockpot sweet potatoes

Spray a 4 or 5 qt. crockpot and preheat while preparing

3-4 pounds of sweet potatoes, peeled and cut into 1" cubes about 8 cups

In a small bowl combine,

4 tablespoons of melted butter

1/4 cup of packed brown sugar

1 teaspoon of fine sea salt ( morton)

1/2 teaspoon of pepper

1/4 teaspoon of cinnamon

Pour over sweet potatoes in crockpot and stir well

You have 2 options of cook time

cook one hour on low and then 2 hours on high

           OR

3 hours on low and one hour on high

For Thanksgiving sweet potatoes you can 1 1/2 x the recipe and cook in a 5 or 6 quart crockpot. I cook on high for 3 hours. Remove lid and top with mini marshmallows. Replace lid and let melt 15 minutes.

Re: NOVEMBER 2024 RECIPE GAME

[ Edited ]

I got this back in 2021.....

Crazy Crust Apple Pie

No rolling or chilling of pie dough required. The crust is made from a batter making this a cross between a pie, a cobbler, and a cake. Flour, sugar, baking powder, salt, butter, milk, egg, and apple pie filling. Only takes a minute to make and is ready to eat in about 30 minutes.

Equipment:   Pie plate or 9 in round cake pan

Ingredients:

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup melted butter
  • ¾ cup milk
  • 1 egg
  • 1 (21-oz) can apple pie filling  ** 2 3/4 CUP
  • 1 Tbsp cinnamon sugar, optional

Instructions:

  • Preheat oven to 400ºF. Lightly spray a 9-inch pie plate or cake pan with cooking spray.
  • Mix together flour, sugar, baking powder, salt, melted butter, milk, and egg. Pour into prepared pan.
  • Spoon pie filling over the batter to within 1-inch of the edge. DO NOT STIR.
  • Sprinkle with cinnamon sugar, if using.
  • Bake for 35 to 40 minutes.

Notes:

  • I recommend having all the ingredients at room temperature before making. Combining cold eggs and milk with warm melted butter can cause the egg to curdle. Take the milk and eggs out of the refrigerator about 20 or 30 minutes before making the pie.
  • Can use any pie filling you prefer. I used apple, but this will work with any can of fruit pie filling.
  • Feel free to add some pecans or walnuts to the pie.
  • You can make the pie ahead of time and store it in an air-tight container. It will keep 2 to 3 days.
  • You can freeze the baked pie for a quick treat later. Thaw on the countertop for about one hour before serving.

I don't use canned apple pie filling so here is the recipe I used

Homemade Apple Pie Filling

Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Learn how to make quick and easy homemade apple pie filling recipe from scratch on the stovetop. Made with simple ingredients and ready in just 30 minutes.
Yield:
cups

Ingredients

  • 6 cups Apples, cored, peeled and roughly sliced
  • 2 cups Water
  • 1 tbsp Lemon juice
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown sugar
  • 1/4 cup Cornstarch
  • 3/4 tsp Cinnamon powder
  • 1/4 tsp Nutmeg powder, Optional
  • 1/8 tsp Allspice powder, Optional

Instructions

  • In a deep bowl deep bowl, mix together the apples and lemon juice and keep aside. This prevents them from turning brown.
  • In a saucepan, add water, cornstarch, brown sugar, granulated sugar, cinnamon, nutmeg, allspice.
  • Cook on medium heat and bring to a boil, while constantly mixing (or else you will end up with lumps).
  • Add the apples and bring to a boil again.
  • Lower the heat and let it simmer for about 15 minutes. Your apples should be soft but not "mushy."
  • Turn off the heat and allow the filling to cool down completely. It will thicken as it cools down.
  • Pour this mixture into jars with sealed tops and refrigerate for up 1 week.
  • If you are freezing this filling, pour it into freezer bags once it fully cools down. Seal it properlyand freeze up to 3 months. Enjoy!
