Scallops are just to $ for me.

 

I can get a nice bag of shrimp at Sam's and pretend....LOL

 

They can be tricky to cook also!  The ones in the picture are done to perfection!

 

Mine probably would not be.

Yes, they tend to get rubbery easily. Too expensive for that.

 

I really enjoy shrimp anyways.

 

What's your fav way to make shrimp?

Garlic, butter etc....but I did try a 'red' recipe that I actually loved!  

 

Totally diff flavors...lemme see if I can find it.

Shrimp Saganaki

 

Saganaki, a traditional Greek preparation named after the pan in which it’s prepared, is best served straight from the skillet, with plenty of toasted bread for scooping up the savory tomato sauce. If you can find them, wild American shrimp and high-quality Greek feta really make this dish special.

Ingredients                                                           Servings: 4 appetizer

  • 1 tablespoon olive oil
  • 4 scallions, white part only, minced
  • 2 cloves garlic, chopped
  • 1 cup drained diced canned tomatoes
  • ½ cup dry white wine
  • cup vegetable broth
  • 2 tablespoons ouzo or other unsweetened anise-flavored liqueur
  • 1 teaspoon chopped flat-leaf parsley plus more for garnish
  • 1 teaspoon chopped fresh dill plus more for garnish
  • pinch of dried oregano, preferably Greek
  • Kosher salt and freshly ground black pepper
  • 12 medium shrimp (about ½ lb.), peeled, deveined (head on if desired)
  • 1 4-oz. block feta
  • slices of country-style white bread, toasted
  • Heat oil in a medium heavy skillet over medium-low heat. Add scallions and garlic; cook, stirring often, until soft, about 3 minutes. Add tomatoes and cook, stirring occasionally, until reduced by half, 4–6 minutes. Remove from heat; add wine, broth, ouzo, 1 tsp. parsley, 1 tsp. dill, and oregano. Season with salt and pepper. Cook over medium-high heat, stirring often, until tomato mixture is reduced by one-third, about 5 minutes.
  • Reduce heat to medium. Season shrimp with salt and pepper. Add shrimp to skillet, arranging around edges. Place block of feta in center of skillet. Cover and simmer until shrimp are cooked through and feta is warm, 4–6 minutes.
  • Remove skillet from heat. Transfer shrimp and feta to a large shallow bowl, if desired. Garnish with parsley and dill. Serve with toast alongside.

I don't have ouzo...but I did put a little Anise extract in there!!  Prolly 2 teaspoons only cuz I was afraid of it!

 

I didn't have veg broth so just used chix broth.  That I always have.

 

I also didn't use a block feta...but I buy the Mediterranean Crumbled Feta from Wegman's and put a LOT in !  

 

I'm SO glad you brought this topic up!

 

I am gonna make this again this weekend!!!!!

Cinnamon Roll Cocktail

 
This cinnamon roll cocktail has just two simple ingredients of RumChata and Kahlua and tastes as good as a cinnamon roll.
 

 Servings: 2

 

Ingredients

  • 3 Shots of RumChata
  • 1 Shot of Kahlua
  • Ice

Instructions

  • Fill a shaker with ice. Pour RumChata and Kahlua in shaker.
  • Shake to combine.
  • Pour over ice in two short glasses.
