Bourbon Peach Pie Cocktail

 

This was a cocktail done on a whim, but it turned out to be so tasty! This peach cocktail is a yummy one!

 

 

PREP TIME: 3 minutes
 
 
Ingredients
 

For the Cocktail

  • 1.50 ounce bourbon
  • 2 ounces peach pie mix
  • .25 ounce freshly squeezed lemon juice
  •  

For the Peach Pie Mix

  • dash of nutmeg
  • 1 cup brown sugar
  • 1 Tbsp cinnamon
  • 4-5 large peaches, sliced
  • 1 teaspoon freshly squeezed lemon juice

Instructions

 

For the Cocktail

In a shaker, pour the bourbon, peach pie mix and the lemon juice.

Add ice and shake well.

Strain into a cocktail coupe.

Cheers!

 

For the Peach Pie Mix

Slice peaches into thin sections and place into a bowl.

Cover the peaches with brown sugar, cinnamon, nutmeg and lemon juice.

 

Allow to sit for 2 hours.

Pour peaches into a colander, strain out the juice.

Mini Peach Pies

 

Filled with homemade peach pie filling and baked in a muffin tin, these adorable little mini peach pies are a sweet, simple, and perfectly-portioned summer dessert! Serve them warm with a side of ice cream-- and use any leftover peach pie filling as a compote! 

 

PREP TIME: 30 minutes
COOK TIME: 35 minutes
TOTAL TIME: 1 hour 5 minutes
 
 

Ingredients

For the peach pie filling:

  • 4 cups ripe peaches, peeled and diced
  • 1/2 cup flour
  • 3/4 cup white sugar
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

For the mini peach pies:

  • 2 pre-made frozen pie crusts
  • 1 egg, whisked
  • Pinch of sugar
 

Instructions

  1. Place diced peaches in a large bowl and sprinkle with lemon juice. In a separate bowl, mix together flour, sugar, cinnamon, nutmeg and salt. Pour over the diced peaches and gently stir to combine.
  2. Preheat the oven to 375F. Spray an entire muffin tin, including both the inner and outer cavities, with baking spray.
  3. Roll out pie crust on a lightly-floured surface. Use a four-inch biscuit cutter to cut out circles of dough and gently press into each open muffin cavity, making sure to fit the cavity as snugly as possible to avoid creating air pockets.
  4. Fill each cavity about 4/5th’s of the way full with homemade peach pie filling, erring on the conservative side to avoid spillover. Reserve any leftover homemade peach pie filling for future baking or to use as a compote over ice cream.
  5. Use the extra dough to create your mini pie crusts. Gently press and seal the top and bottom edges of the pie crust together until there are no gaps. If you have trouble getting the crusts to stick together, dip your finger in water and lightly trace the edges of the dough you want to seal.
  6. Brush mini pie crusts with a whisked egg and sprinkle sugar on top. Bake 30-35 minutes until lightly golden with bubbling filling. Remove mini peach pies from the oven and wait for them to cool completely before attempting to remove them– about 30 minutes. Once they’ve cooled, use a small pairing knife to gently cut around and remove each pie. Serve immediately (preferably with vanilla ice cream) and enjoy!

Decorative Pie Crust Tips

If you want to create some more intricate pie crust designs– or if you just enjoy baking shortcuts, look on "A" for fun fondant molds and cutters! They make creating “fancy-looking” mini pie crusts and lattices an absolute breeze. For these mini peach pies, I used this rope fondant mold and a few shapes from this fondant cutter set.

 

Storage

  • Peach Pie Filling- Homemade peach pie filling will keep in an airtight container the fridge for up to 2 weeks and in a freezer-safe airtight container for 3-4 months in the freezer. 
  • Mini Peach Pies- Although they're definitely best freshly baked, these mini peach pies can be covered and stored at room temperature for up to two days. They're also fridge and freezer-friendly, too. Cover them tightly with foil or plastic wrap and store them in the fridge for 4-5 days or wrap them tightly with tin foil or store them in an airtight container in the freezer for 3-4 months.

Banana Split Dessert Drink Recipe

 

The Banana Split Cocktail is a delicious dessert drink. It's a yummy blend of banana and chocolate liqueur and vanilla vodka with an appealing decadent presentation.

 

PREP TIME: 6 minutes
 
 

Ingredients

  • 1 1/2 oz. Vanilla Vodka
  • 1 oz. Creme de Cacao
  • 1 oz. Banana Liqueur
  • 1/2 Cup whipped topping
  • 1 Tablespoon chocolate syrup
  • 1 maraschino cherry
  • 1 strawberry
  • 2 banana slices

Instructions

PREP:

  1. set a martini glass in the fridge to 30 minutes. (or freezer if you need a quick chill)
  2. Slice the strawberry and banana slices. set aside.

Make the Cocktail:

  1. Fill your cocktail shaker half full with ice.
  2. Measure and pour into your shaker the vanilla vodka, crème de cacao, and banana liqueur.
  3. Seal the shaker. Shake vigorously 30 seconds until the shaker is very cold.
  4. Strain the cocktail into your chilled martini glass.
  5. Spray on the whipped cream topping.
  6. Drizzle the chocolate syrup over the whipped cream as desired.

Garnish:

  1. Pierce two strawberry slices and a banana slice with a cocktail pick.
  2. Set the pick into the glass.
  3. Add a maraschino cherry on top.
  4. Serve.

Super Easy Cherry Turnovers!

 

Super Easy Cherry Turnovers

 
Super Easy Cherry Turnovers are one of the easiest desserts to make and the fastest to disappear!
 
Prep Time: 10 minutes 
Cook Time: 20 minutes 
Total Time: 30 minutes 

 

Servings: 8

 

 

Ingredients

  • 1 Puff Pastry Dough, box (found in the freezer section, thawed according to package instructions)
  • 1 Cherry Pie filling, 21oz can
  • 1 egg white, lightly beaten

For the Vanilla Glaze:

  • 1 1/2 cups powered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 375 degrees F.
  • Unwrap both of the puff pastry doughs and cut into 8 squares (4 from each dough).
  • Place a heaping tablespoon or two of cherry pie filling in the center of each square. Brush the edges of the squares with the egg white and fold over to enclose the pie filling.
  • Bake on an un-greased baking sheet for 20 to 25 minutes, or until puff pastry is golden brown.
  • Let cool on a wire rack.

To make vanilla glaze:

  • Combine the powdered sugar, milk and vanilla extract in a bowl and whisk until smooth. Pour in a frosting bag or zip close bag then snip off the tip or corner to pipe on the cooled turnovers. Enjoy!
Notes
You can use any type of pie filling in place of the cherry. Or, use a tablespoon of Nutella for a chocolate turnover!

Rainbow Bridge Remembrance Day on August 28th sets aside a day to remember the pet companions we’ve lost.

The death of a pet, whether furry, feathered, or an uncommon variety, is felt deeply. They become family and a familiar part of our lives. Mourning their death is different for everyone, and the observance provides a way to help heal the ache of loss.

 

The pain of loss is real. As each person travels through their grief, we remember the companionship and comfort they provided to us. Don’t forget that part of the relationship included care provided by you. The empty space left by the loss of a beloved pet is sometimes a difficult void to overcome.

 

Celebrate the home you provided and the joy your beloved pet brought you in return. When you are ready, you will know the time has arrived to find a new ‘critter’ to replace the emptiness felt. There are many animals yet to find a home. In time, you can be their new home.
