@tiny 2

Our daily high temps have been breaking historic records for weeks now. I'm calling this The Endless Summer.

A lot of Halloween pumpkins are going to start rotting early, I guess.

Quick Aldi Update:

I am flagging @Writer with Flair  as I know we have chatted about this in the past but those Beyond Meat burgers are very, very good!  What a complete shock as they didn't look too appetizing to me when I saw the raw product but they fry up reall well and the texture is very close to regular ground beef.  I am pleasantly stunned but if you are looking to dial down on beef and love burgers again I can't say enough positive things about them.

They are pricey (I thought you got four patties for $4.49 but it's only two so if you are sensitive to price point this may be an issue) but I am truly so glad I tried them and even more glad that they are as everyone said, delicious!

Who knew?

@novamc1 @mustang66lady @ChiliPepper @RespectLife @momtochloe  Normally here it starts to cool after the 2nd week in Sept. One year I remember going through the 3rd week but then it always give up the heat ghost for another year. I have never experienced anything like this. After tomorrow and Friday it is supposed to cool down .I AM SICK OF ITWoman Mad

@Writer with Flair, My bonus daughter has the book. Way back when, she was a vegetarian and loved Irregardless and one in Chapel Hill named Pyewacket. Pyewacket went out of business. My favorite was the Lemon Tahini dressing and tabouleh. There is a small Lebonese restaurant that has become my favorite for tabouleh though. I have not been there since I am home taking care of my husband but she picks up lunch there and brings it here for us. Thanks for the recipes.

tiny2,

I don't ever remember going to Pyewacket, but I heard that it was good.  Too bad that it went out of business.  There were so many great restaurants in Raleigh/Durham/Chapel Hill.

Both my husband and I love tabouleh.  If you ever do a lower carb diet, we found that substituting ground, raw cauliflower for the bulgar wheat works nicely.

We also really liked the Irregardless Lemon Tahini dressing.  Our Whole Foods carries a Cashew Tamari dressing (in the refrigerated section of the produce department) made by a wonderful little restaurant in Austin, TX called Mother's Garden of Eating.  Eric Johnson (the rock guitarist) is a part owner.  It is just about our favorite dressing.  If your Whole Foods doesn't carry it in stock, they might be able to get it for you.

Thought I'd share the story of what I fixed myself for dinner last night.  So easy  it was like falling off a log backwards..

DH was out of town for the weekend, so I made something I knew I would probably like, but him not so much, because he likes but doesn't love Asian flavors and likes his veggies separate from meat.  I like them all mixed up.

I had a bag of frozen stir-fry veggies ( containing broccoli, various types of peppers, some Chinese-style noodles, and other stuff) and  some chopped white meat from a  store-bought rotisserie chicken.

Per veggie  package instructions, I lightly oiled a heated stainless steel wok-shaped pan and threw in the vegetables and shortly after that, added  the chicken.

After about two minutes of sauteeing, I added some  stir-fry Szechuan Spicy Sauce (brand name Tsang) and stirred around in the hot pan for about another two minutes.

Very good eating.  Too easy.  Nice one-pan dinner.  Ate the leftovers just now for lunch.

DH can go out of town more often, as far as my menu preferences are concerned.  LOL!!

novamc,

     That sounds delicious!

You mentioned egg rolls--yum!!

I like the Chung brand that can be found in the freezers of many grocery stores.

Haven't bought them for a while, but will get them anytime a box of four goes on sale.

I like the chicken type, but have also tried the pork and all-vegetable varieties.  Very good.

For me, two of those egg rolls are a meal in themselves.

novamc,

When I first got married, I decided that I would make some egg rolls to go with some pepper steak.  I assumed that all I needed to do was stuff some wonton wrappers (with veggies and a little protein inside) and fry 'em in oil.   How hard could it be, right?

As often was the case, I did not use a recipe.  (Culinary Hubris strikes again.)  Had I referred to a recipe, I would have discovered that you should use a slurry of arrowroot and water to "glue" the edges of the wrapper together when you overlapped them.  I did not do this and the egg rolls opened up in the boiling oil.  What a greasy mess!  Mr. Writer was so sweet about it and insisted on eating them anyway.  With duck sauce and some chinese mustard, they were edible.  However, I did notice that both my hair and skin were incredibly oily for the next couple of days after that.

Got a problem with dry skin and/or hair?  Want to save some money on moisturizer and conditioner?  Fry up a batch of  "Let the Veggies Loose Eggrolls."  They'll fix ya' right up.

mtc,

I know what you mean about thinking you were getting four patties and only getting two.   The packaging faked me out, too.

I agree, the faux beef patties are amazingly like real meat.  I actually like the Beyond Sausage links the best.  They really are tasty--but pretty heavy on the sodium (500 mg per link).  I cut one link into about 8 slices, cook the pieces in a frying pan, and put them in a freezer bag.  I have two slices with an egg and a piece of Ezekiel toast for breakfast.
