Happy Fall Wednesday!

Fall has come here with a vengenance this week-our high's today are only going to be in the '60's and that wind!   30 degrees cooler in just 3 days! 

 

Just got back from Aldi's and am so sad-no brioche buns today!  Was anyone else able to find them at their Aldi's?   Am thinking of going to another Aldi's near me to see if they have them.

I'm so jealous you have tarragon vinegar at your Walmart-ours just seems to have a wall of vinegar that consists of 3 or 4 brands of white, apple cider, and balsamic vinegars!  And several brands of red wine vinegar.   I have not cooked with tarragon (herb), I used to make a curry dip that used tarragon vinegar in it.  Used to be able to purchase tarragon vinegar anywhere and now can't find it at all!

And I went in to vote absentee in person this morning, too.  Tuesdays are my worst days and my longest days, it's less stressful trying to vote early or get home before the polls close.

 

The registrar person seemed very nervous.  Lots of nervous chatter and trying to be funny.  I guess people are on edge about this election.  I have a ton to vote for:  2 Virginia Constitutional Amendments, mayor, 3 city council seats, city treasurer and school board.

 

I'm glad to have that over with.  I noticed in 2008 when I voted absentee in person that I got no political calls after I voted.  I think they keep updating the lists as it gets closer to the deadline to register, so once I vote, I must come off the list and they have no use for me.

 

It was the best side benefit to voting early.

Pepperoni Football


There's no pizza crust, but there is a lot of cheese.

 

Total Time: 0:10 - Level: Easy - Serves: 10 

 

INGREDIENTS:

 

2 8- oz. blocks cream cheese, at room temperature
1 c. shredded mozzarella
1/4 c. chopped fresh parsley
2 tsp. dried oregano
1 tsp. garlic powder
1 tsp. crushed red pepper flakes
kosher salt
2 c. mini pepperoni
1 slice mozzarella, cut into thin strips

 

DIRECTIONS:

 

In a large bowl, stir together cream cheese, mozzarella, parsley, Italian seasoning, and crushed red pepper flakes. Season with salt.

 

Transfer cream cheese mixture to your serving platter and form cream cheese mixture into a football shape.

 

Smooth top and stud with mini pepperoni. Top with mozzarella laces and serve with crackers.

re:  your trouble finding tarragon vinegar.............

 

Finding flavored  or "specialty" vinegars in my local mainstream grocery stores  (Giant Food or Safeway) will involve searching high on the uppermost shelves around other vinegars.  They don't stock much of those types, and there might be a limited supply or variety. They seem sort of hidden away among the lesser-known types and brands, if they are available at all in a particular store. 

 

I suppose we could aways infuse our own vinegars with any herb, but I know little about that, or what level of vinegar acidity to use.

 

I just know that tarragon has a nice fragrance, in addition to the taste it adds to foods, especially chicken.

 

If you have Wegman's, Whole Foods, Trader Joe's or another smaller chain store, you might have more luck.  Good luck!

The stir caused among critics about ketchup in chicken salad was extra funny, and gave me an opportunity to point out that the venerable "Joy of Cooking" cookbook, which  has been around for decades, suggests adding chili sauce to chicken salad.  ,

 

The only chili sauce I've ever seen is tomato-based, and so is ketchup.
