Good morning everyone

 

I have the day off today as I have an eye doctor appointment this morning.  I can't wait to get my progressives changed to remove the computer area in the middle.  I rarely wear them because that part is too annoying.  I'm hoping the third time is the charm with these.  LOL

 

I will still get driving glasses for travel and night driving and computer glasses for work.

 

Hopefully Costco won't be too busy this afternoon and I can get everything done today.  I don't need new frames but I'll look and see if they have anything new that moves me.  I still have my Costco rebate check to use.

 

I realized that one of the side benefits of doing all this work party planning is that I get to use my Costco card for big purchases and reap the rewards (literally).

I got a gift card from work way back when. I broke down yesterday & bought myself a present with it for my yard. I love these, been wanting them for a long time.

Today is National Watermelon Day

Watermelon Coolers

 

 

INGREDIENTS:
  • 3/4 cup sugar
  • 3/4 cup water
  • 1 cup fresh lime juice
  • 3 cups white rum
  • 4 cups seedless watermelon chunks (one-quarter of a watermelon)
  • 8 cups crushed ice
  • Watermelon spears and mint sprigs, for garnish
INSTRUCTIONS:
  1. In a saucepan, combine the sugar and water. Bring to a simmer over moderate heat, stirring until the sugar dissolves. Remove from the heat and let cool.
  2. In a blender, combine half of the sugar syrup with half of the lime juice, rum and watermelon chunks and blend until combined. Add half of the ice and blend until smooth, then pour into a large pitcher. Repeat with the remaining ingredients. Serve in chilled glasses, garnished with watermelon spears and topped with mint sprigs.
MAKE AHEAD

The watermelon mixture can be blended earlier in the day and refrigerated. Blend with ice just before serving.

@ChiliPepper Ok duh alert but this looks so interesting . . . can I grill it in a grill pan, place it under the broiler or do I need to fire up my trusty Masterbuilt?
