Yield: 1 or 2 servings, depending on how hungry you are
Ingredients:
- 1 ripe avocado
- 2 eggs
- Salt and pepper, to taste
- Optional toppings: red pepper flakes, fresh herbs, salsa
Directions:
- Preheat the oven to 425 degrees.
- Slice your avocado in half. Remove the seed by carefully hitting it with a large knife.
- Place each avocado half in a small ramekin so the avocado half stays up. Spoon out a little bit more of the avocado flesh to ensure the whole egg fits.
- Crack each egg in a small bowl. Using a spoon, carefully spoon the yolk into the hole in the avocado. Be careful not to break the yolk. Then add the remaining egg white.
- Bake the avocados for 15-20 minutes, watching them carefully. When the whites are set, they're done.
- Sprinkle salt and pepper on top of the egg, and enjoy.
For those that are interested, I attempted to make these (once) and it was a big old fail. Flavor wise good concept but I completely failed on the execution . . . ![]()

Sigh . . . well once again my good friends I say thank you and God bless each and every one of you!
This truly is unchartered territory for me as I have never in my life walked away from a challenge but I cannot believe how much better I feel now (just had my second meal with no "issues"). ![]()
I am truly so bummed this didn't work out as I really thought this was a great opportunity but I guess I haven't reached my final destination. It will stay with me for more than a while that a company that size can knowingly send their front line people out with so little training and then support. I have worked on several projects that involved call centers and I have never seen anything like this before in my life but maybe because they don't have a lot of competition they can be a bit more cavalier in the CS department as let's face it there aren't a ton of online floral places. I honestly don't know and it will take me a couple more days to process this whole debacle.
To be honest, it's just nice to have an uneventful meal again.

Oh, sorry, I didn't realize this recipe had already been posted. I saw it & it looked good (for you guys that like avocados).

Happy Thankful Thursday!
Today is my daughter's 27th birthday! Green is her favorite color so will use it today. I am thankful for her-she is my "baby" and was my "surprise." We have been thru a lot together. She has a day off work today but has an exam in a class she is taking then has a job interview at Barnes Hospital so please keep her in your prayers. I am thankful she is alive-4 months after she turned 21, she started having grand mal seizures and I didn't know if she would live or not. Brain surgery is always hanging over her as her neruosurgeon told her if she had any more seizures, she will have to have surgery. She has a hemangioma on her brain. We never knew about it until she started having the seizures. So extra thankful today that mtc is feeling better and that "my baby" is doing so well!
Off to clean house so everyone have a great day today!

Oh my goodness, hugs to you and your daughter mustang. That is a lot to deal with but I am so, so impressed she has pressed forward. What type of class is she taking?
Good thoughts and lots of prayers that her interview goes well and she gets the job. They would be lucky to have her, she comes from good stuff!
