Quick Bread Recipe Three Ways

Hello Everyone!!! I justed wanted to post an easy quick bread recipe that you can customize in a lot of different ways. It uses only one bowl and a whisk. No hand mixers or stand mixer. You will need measuring cups and utensils as well. I figured this might come in handy during this holiday season.... I use this recipe once a week for a loaf of quick bread for breakfast.

 

One note: The Yield is One Loaf or 3 small loaves... I also use Avocado Oil as a healthier option...

If using the mini loaf pans, I bake at 330 degrees for 30-35 minutes...

            Ingredients

 

  • 1 cup fruit puree mashed banana, pumpkin puree, applesauce
  •  1 cup granulated sugar or brown sugar
  • 1/2 cup melted butter or vegetable oil
  • 1 large egg
  •  1 teaspoon vanilla extract
  •  1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons ground cinnamon or pumpkin pie spice
  •  1 1/2 cups all-purpose flour
  •  1 cup nuts mini chocolate chips, or chopped dried or diced fruits (optional)

           Instructions

 

  • Preheat oven to 325 degrees F and lightly grease one 8x4 inch loaf pan.
  • In a large mixing bowl, whisk together fruit puree, sugar, melted butter (or vegetable oil), egg, and vanilla extract until well combined and creamy, about 60-90 seconds.
  • Stir in salt, baking soda, baking powder, and cinnamon (or pumpkin pie spice) until just combined. Then add in flour and stir until everything is well incorporated. Fold in any additional nuts, chocolate chips, or dried fruits as desired.
  • Transfer to the prepared pan. Bake 50-60 minutes until a toothpick inserted into the center comes out clean.

Sounds delicious,but there is alot of sugar in that bread. Whatw/the fruit puree, the sugar itself and the added fruit pieces.

Question:why is avocado oil healthier? And where can I purchase it?

Sure could use a little good news today.

OF Course it has sugar!  LOL

 

It is a Quick Bread....they all do!  Same as with muffins!!

 

What recipe of this type doesn't???  SMH

Have you ever mixed the 1 cup of fruit puree....like 1/2 cup banana and 1/2 cup applesauce???

 

I always have one banana left over and it wouldn't hit the 1 cup mark.

Fruit is very high in sugar-if your body can take it-go for it.

Sure could use a little good news today.

I use recipes that have less sugar and more flour.  To me the ones with lots and lots of sugar and fruit usually don't cook enough to get cake like, but are heavy and moist.

 

Some like it that way and some don't. Just what 'ya like--it's all good.

But a WHOLE CUP??? Add to that the sugar in the fruit? Quick bread or Quick Dead. Just kidding.

You can always cut back on the sugar a little. I doubt it will be missed.

 

Avocado oil can be purchased almost everywhere. I bought mine at Target.  It's supposed to be neutral good for you type of oil. I probably won't buy it again as I don't use alot of oil and haven't noticed a signficant difference at all in flavor or anything.

I hope my body can keep taking it. I eat a lot a fruit plus a smoothie almost daily. Fixing to make a banana blueberry smoothie with unsweetened almond milk.

About the sugar. I use unsweetened applesauce and We including my diabetic father ate it for breakfast not as dessert. Also, I customized my personal recipe to about 1/2 to 3/4 cup of sugar for 3 mini loaves which I normally make. You will not die of the sugar intake as long as you are moving and not sitting stationary all day... I tried to post a nice recipe for the Holidays, apparently some people's hearts are three sizes too small. SMH...Smiley Sad
