I bought a bag of red-skinned potatoes for smashed potatoes and decided to make potato salad instead.
I cut them in quarters and boiled them for 12 minutes. I discarded whatever skin fell away from them. THEN, I put on a rubber glove and smushed them through my fingers, to where they were just lumpy. I made a mixture of salad dressing, sour cream, hot mustard and a squirt of apple cider vinegar.... salt and pepper to taste and voila - it was great...
I always used to cube them, but after mixing them with the dressing, they became too mushy, so this was a better alternative. Just a thought, ladies..... I mixed it all together with Rachel Ray's rubber spatula......
