Here you go nightowlz Woman Wink

 

Pork OR Chicken Fried Rice

 

3⁄4 cup finely chopped onion
2 1⁄2 tablespoons oil
2 eggs, lightly beaten (use more if you want)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1⁄2 cup chopped carrot (chopped very small)
3/4 cup frozen peas, thawed
4 cups COLD PRE-COOKED rice, seperate grains (preferably medium grain..NOT minute rice)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce (add more if you like)

 

 

Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.


Allow wok to cool slightly.


Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.


Add 1/2 tbsp oil to wok, swirling to coat surfaces.

 

Add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.


Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.


Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.


Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more. 
Serve with additional soy sauce, if desired.

 

**I always cook the rice the night before and add some butter and salt to the boiling water**

@LilBit, you have some of the best recipes. This sounds so good, I think I will try it using pork. Thanks for posting.

Thx for the recipe LBM. I will have to give it a try with pork some time. DH said the fried rice at the mall does not have any meat in it.

Nightowlz..Hi dear. I think that like most recipes, you can tweak it to you liking . I don't see why you couldn't leave the meat out of it..maybe add a bit more carrots and peas in its place..  Woman Wink

That's what I told DH. I told him the reason why it does not have meat in it at the mall is because it would cost them more money to make & sell it. He always gets the fried rice & bourbon chicken at the mall.

@ChiliPepper Here's the Bourbon Chicken Recipe I use if you want to try it.

 

Bourbon Chicken

 

2 lbs boneless chicken cut into bite sized pieces

1-2 T olive oil

1 garlic clove, crushed

¼ t ginger

¾ t crushed red pepper flakes

¼ c apple juice

1/3 c light brown sugar

2 T ketchup

1 T cider vinegar

½ water

1/3 c soy sauce

 

Heat oil in large skillet.

Add chicken pieces & cook until lightly browned. Remove Chicken.

Add remaining ingredients, heating over medium heat until well mixed & dissolved.

Add chicken & bring to a hard boil. Reduce heat & simmer for 20 mins.

 

I use  Coconut Secret, The Original Coconut Aminos, Soy-Free Seasoning Sauce instead of regular soy sauce. Soy Sauce is too salty. I do sprinkle with a little Himalayan sea salt.

I tried this using boneless skinless chicken breasts but thought it was a little on the dry side. We liked it better using boneless skinless chicken thighs. I know they are not using breast meat in the bourbon chicken they sell in the mall.

@ChiliPepper Enjoy it. I wanted to make some more but I used the last of the Coconut Aminos so I need to order some right now. LOL!!!
