Read the recipe by "192..." for the pineapple marshmallow dessert and thought of this pie my mom made.

 

9 inch graham cracker crust - home made or store bought

32 large or 3 cups mini marshmallows

1 can 20-1/2 oz crushed pineapple drained (reserve 1/2 cup syrup)

1 cup chilled whipping cream

1 teaspoon vanilla

1/2 teaspoon salt

 

bake the graham cracker crust and cool if making it from scratch

 

heat marshmallows and reserved pineapple syrup over low heat, stiring constantly until marshmallows are melted.  Chill until thickened.

 

In chilled bowl, beat whipping cream until stiff.  Stir the chilled marshmallow mixture until blended and fold in the whipped cream.  Reserving 1/2 cup pineapple for garnish, fold the remaining pineapple, vanilla and salt into the marshmallow mixture.  pour into crust and garnish with reserved pineapple.  chill for 2-3 hours

 

I can remember this pie is very good.   I think this recipe is pre Cool Whip Era, all these recipes for pies my mom had were all real whipping cream ones.  Also, you need crushed pineapple in syrup and not in natural juice.

Oh! me too. My DL made something similar, and it was so good, only in a tray form.

Just Bling, I wanted to let you know I made this pineapple pie, YUM!!!! My husband and I ate the entire thing in less than 24 hours, thank you, it was delicious!!!
