Mom made these and there isn't any book or recipe I could find that "finishes" the dumplings this way.
2 cups mashed potatoes (cold) leftovers work well
1 egg
1 cup flour but mom made it like a scant 1 cup
Start with mashed potatoes. They should be cold, so this is a great way to use up leftover potatoes.
Add egg and flour and mix until the dough comes together. Place dough onto a floured surface and divide into two parts. Roll one part of the dough into a long log and slice into 1.5 to 2″ dumplings. (mm took a scant tablespoon and rolled them in the palm of her hand)
In a large saucepan or pot, boil water and add 1 teaspoon of salt. Add 5 to 8 dumplings at a time to the boiling water and cook until they start to float at the top. Remove and place on plate. Repeat with remaining dumplings.
Once cooked, move to frying pan with approx 1-1/2 cups bread crumbs, 1/4 cup brown sugar and about 3-4 t butter.
Fry the dumplings in the brown sugar crumb mixture, serive with syrup and jelly.
This was actually "dinner" for us. My grandma made these too so it's a really old recipe, nothing went to waste many years ago, everything was used in some way or another.

Sounds yummy. In my Gram also used leftover mashed potatoes similar to your recipe with the flour and egg.... but cooked more like potato cakes in pan. But I like the idea of t dunplings and the brown sugar.... I will definitely try that next time I have leftover mashed tators. THANKS!!

This recipe sound good too, so I had to copy it. I make my dumplings very similar, but never with the brown sugar and bread crumbs. I will have to try this the next time I make chicken and dumplings ![]()

We did potato patties in bacon grease and Crisco when I lived on a farm. We had 100 head of beef cattle and 3 commercial chicken houses in a valley looking at the Blue Ridge Parkway.
I wouldn't have those today. I'd never get that worked off.

My grandmother and mother made small dumplings that way, and finished them off similarly with some breadcrumbs browned in butter.
They didn't include the sugar, though.
I remember they were delicious.

we used to make a dessert from left over mashed taters. it really isn't a recipe. add confectioners sugar to the potatoes til you have something like a pie crust dough. roll out to a rectangle and spread with your favorite jelly or nutella, roll it up and cut in slices and roll in more confectioners sugar. yum!
