Pear Butter

3 large pears

1/2 cup apple cider

1/4 tsp. cinnamon

dash of lemon juice

1/2 tsp. vanilla

Peel pears, removing seeds and stems, and cut into large pieces. Place in a saucepan with the cider, cinnamon, and lemon juice. Cover and bring to a boil. Reduce heat to medium and cook for 15 minutes or until the pears are tender. Remove from heat, cool slightly, then puree the mixture in a food processor. Cook over medium heat again, bringing mixture to a boil. Add the vanilla and allow the mixture to thicken. Cool and serve.

Makes about 2 cups.
