This is a common salad in the south. Thanks for sharing it! Fresh peas work well too!

Made it for mothers day. It's very good. I can just have pea salad and some Ritz crackers for lunch and be very happy.

Pea Salad

PEA SALAD

Ingredients:

  • 1/3 cup Sour Cream
  • 1 Tablespoon Mayonnaise
  • Salt And Pepper
  • 1 Tablespoon White Vinegar
  • 4 cups Frozen Green Peas, Almost Totally Thawed
  • 8 slices Bacon, Cooked Until Crisp And Chopped
  • 1/2 whole Small Red Onion, Halved And Sliced Very Thin
  • 6 ounces, weight Cheddar Or American Cheese, Cut Into Small Cubes
  • 3 Tablespoons Minced Fresh Parsley

Preparation:

Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste.

Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. (Pop the extra dressing in the fridge, too.)

Remove from the fridge and stir in the rest of the dressing to your liking. Sprinkle with more parsley before serving.


Thank you so much for posting this recipe.  I made it yesterday and it was delicious.  I made it exactly like the recipe using the bacon and it was a big hit at our house.

I make this pea salad! It's a great, light salad that complements a lot of different foods. I first tried it a few years ago when my aunt made it as a side dish at Easter. Leftovers keep very well in the fridge. I use light or fat-free mayo/sour cream and it's fabulous. Need to keep the full fat cheese it's a requirement Smiley Wink Sharp cheddar works very well in it.

Thank you for posting this recipe and I am glad it was brought forward.  I love pea salad. Reminds me Inhave not made it in awhile.  Here is a recipe I have made.....could add cashews instead of peanuts and cheese.  

 

Pea 'n Peanut Salad*

 

1 pkg. (10 oz) frozen peas, thawed

1 cup dry roasted peanuts

1 cup chopped celery

6 bacon strips, cooked and crumbled

1/4 cup chopped red onion

1/2 cup mayonnaise

1/4 cup prepared zesty Italian salad dressing

 

Combine the peas, peanuts, celery, bacon and onion.  In separate bowl, combine mayonnaise and Italian dressing.  Pour over salad and toss to coat.  Chill until serving.

OMG!  That is a real blast from the past.  My mom made that salad when we were kids.  It was one of her specialties, we all loved it.  I think she stopped making, as she got older and more health consious.  It's got a pretty high fat content but I can see it as a special occasion recipe.

Thanks for sharing this recipe! I've had a couple recipes for pea salad stashed away for years and have never tried them.  This version sounds good.  I think I'll use frozen baby sweet peas and some diced ham in place of the bacon.

I really like pea salad, but I haven't had it lately. I might need to make some soon. LOL

 

I have always used canned peas, and they have never been mushy. That would be nasty. Yuck

 

I like it when first made, and also cold from the fridge. Some things are just good! Smiley LOL
