My recipe for rice pudding is VERY basic.  Just an observation here.  There is a larger quantity of rice vs liquid in your recipe My recipie calls for 1/2 cup of rice and 5 cups of whole milk. (1/4 c sugar)  I don't know if you use sugar but sugar binds up liquid so there may have been less available for the rice to absorb.  Heavy cream sounds decadent!

I know beans get harder as they age, I'm betting rice does too.
