@Calibeach .... thank you for posting your recipe.  It sounds good.  I need some new things to try for brunch.  I have been fixing the following recipe for years.  It is very good as well and an easy make-ahead recipe.

 

FARMER'S CASSEROLE

 

3 cups shredded hash brown potatoes, thawed slightly

3/4 cup shredded cheddar cheese

1 cup diced ham

1/4 cup sliced green onions

4 beaten eggs

1 (12 oz) can evaporated milk

1/4 teaspoon pepper

1/8 teaspoon salt

 

Grease or spray a 2 quart square baking dish.  Arrange potatoes evenly on bottom.  Sprinkle with cheese, ham and green onions.  Mix together eggs, milk, pepper and salt.  Pour egg mixture over potato mixture.  (This dish can be covered and refrigerated at this point for several hours or overnight.).  If refrigerated, let it set out for 30 minutes before baking.  Bake, uncovered, at 350 for 40-45 minutes until center is set.  If refrigerated it may take 55-60 minutes.

 

Note....for 9x13" pan use following ingredients....

4 1/2 cups shredded hash browns

1 cup cheese

1 1/2 cups ham

1/2 cup green onions 

6 eggs

1 1/2 cans evaporated milk

(Bake 1 hour or longer until center is set.  Test with knife.)

@shoekitty - I've made your Blueberry French Toast casserole and @walker , I've made yours too - both for Christmas morning! And they are both now favorites.

 

 

 

My family does not like tater tots at all - my children never did, even when they were young, so I would have to tweak your recipe a little @Calibeach!  Smiley Wink

@shoekitty  good ideas! I vaguely recall making the French Toast casserole. The Strata is also a good option. Going to look at some recipes.

@walker  thank you for sharing your recipe! I like the option for shredded hash browns. I'm thinking of making a couple of the overnight casseroles for Mother's Day brunch.

@beach-mom  I love those dishes, the French toast cassarole is my favorite, I do tweak with fruits.  We are in Berry country here in CA, and I live to use Olallieberry, blackberry and raspberry, mix them.   I also am fussy about the French bread, there is a local Santa Cruz bakery makes the best French organic baguettes.  I also use Strauss half and half and cream.   The way I look at it, we eat healthy everyday.  lol.  We don't eat meat,eat organic and do what we can. But when company comes, or family... we roll out the carpet and enjoy. I'm glad for this thread, as I forgot about these easy dishes!!!  It's comfort food, and also with fruit and other goodies it looks gorgeous!  I love the Paula Dean Cookbook for this alone.  Another cookbook I actually use more than any other cookbook I have, is the Fosters Market Cookbook. There are two. The first one I think has the "Says bread pudding, with the whiskey toffee sauce", this one was a request from my church for every darn event they had. lol. It is killer bread pudding like no other, made with a French baguette, the best cream mixture....you can look it up. It also can be made ahead.

 I've made the hash brown casserole before, but this looks delicious. Easy, too. DH, in particular, is very fond of tater tots.
