If you like the ingredients, you'll love this combo. What makes this pasta recipe unique to other Caprese style pastas is the two hours marinating the sauce ingredients before combining with the penne, and that is what makes this so very good. Try it!

Pasta with Tomato, Fresh Mozzarella and Basil

2 lb fresh tomatoes, diced small
1 bunch basil leaves, cut into fine julienne strips
1 lge clove garlic, minced
4 oz fresh mozzarella cut into 1/4-inch pieces
1/2 t red pepper flakes
1/4 c olive oil
salt and pepper to taste
1 lb penne pasta
1 c grated fresh Parmesan cheese

Place all ingredients except pasta and Parmesan cheese in a large bowl. Cover and let sit at room temperature for 2 hours. Bring a large pot of water to boil. Add pasta. Cook,
uncovered, until pasta is just tender. Drain and immediately mix with fresh sauce. Serve at once, topped with grated Parmesan cheese. Serves 4 to 6.
