Saw this in the paper today from the Heloise column. You crack 2 eggs into a ziplock quart freezer bag. Add whatever, you'd like, cooked ham, mushrooms, onions, peppers, cheese, tomato, hash browns, sals, etc. Close bag, making sure all air is out, then shake the bag to mix everything. Place the bag in roiling, boiling water for 13 minutes. Open the bag and place on plate. You can prepare the night before and just place into the boiling water the next morning. Great if you are entertaining for breakfast or brunch and have everyone make their own. I thought this was a clever way to make omelets!
