I'm not gloriajean, but I'll tell you what I did. I used a nonstick skillet and preheated on medium high. I splash a little water in the pan and if the water jumps around and sizzles, the pan is hot. I then spray with butter Pam. I'm sure Pam isn't exactly healthy, so you could wipe the pan with a little oil. I use a paper towel to do this and remove it from the heat while I'm wiping the pan.

They don't exactly brown, but you can tell they are cooked by lifting the edge of the pancake.

I use coconut oil, in my electric non stick pan. I've also used sunflower oil. They do brown and flip over. I"m sure you'll love trying them with variations like others are doing - making them just a little different every time. No flour in them, that's what surprised me! I saw this recipe this morning. My neighbor was coming over for brunch & I had planned scrambled eggs with fresh thyme & cheese plus bacon & thought these pancakes would make a great addition. They were delicious & my neighbor loved them too. I have some left over in the fridge to have tomorrow. I just used sugar free syrup on them. Thank you for sharing this - I will definitely make them again!

Hi Gloriajean,

We tried them today (with gluten free oats). The first one looked a little blobby, so we dropped the rest in the Vitamix and pulsed it a bit until it was more like regular pancake batter. They were very good. I topped mine with honey and apple butter and we added cacao nibs to some of the others. Thanks for much for posting!

I think it would also be good as a savory breakfast- maybe omit the cinnamon and add Italian seasoning and chopped cooked turkey bacon or chicken sausage.

Thank you for this recipe, gloriajean! I'm not much of a cook, but I love pancakes. Oatmeal's healthy properties makes this a better type of pancake. I might cook them up with chopped nuts.

I made them again this morning, and have enough for tomorrow morning. This morning we topped it with a half banana each, which was very good! Tomorrow I think I'll try our thawed raspberries I froze from our bushes for a different taste. I really enjoy making these, and they are so good and healthy. Oh I also grinded an apple in them!
