2 1/2 cups rolled oats

1 1/2 cups water

2 egg whites (I used the whole eggs)

2 tsp. olive oil

3 tsp. cinnamon

Mix and fry pancakes turning once.

I made these this morning, and they are filling and good. On top I used Earth Balance and maple syrup.

Did you use 2 whole eggs? Can you use Canola oil instead of olive oil?

Yes, I used two whole eggs. I didn't use olive oil, I used sunflower oil, I'm sure any kind of oil will be good. Enjoy! I just hate to throw away the yolks, there's so many benefits in yolks.

I've never seen an oatmeal pancake with no flower. Did you run the oatmeal through a food process?

No - just used the oatmeal (rolled oats as is). I never saw a pancake recipe without flour too, so didn't think it would work, but it did. Even no baking powder or soda!

It was heavy but good. I'll make it again - and it's sooooo easy!

I made half the recipe and had it for lunch topped with stewed apples. Yummy!

These sound wonderful because I can't have dairy and I'm trying to cut out flour.

Will this serve two people? Did you use old fashioned oats or the one minute kind?
