@Carmie  Thank you!  Do you think I could put a serving size in a  Food Saver Bag, close the top with a clip, then freeze it, take it out and then use the Food Saver to pull all of the air out it would last a little longer?

The food saver is a good idea. It will keep it fresh.  Milk/ cream does not keep in the freezer too well for months at a time, so I would eat it within a month or two.

If you have raw oysters, you could freeze half the oysters and liquid.  Make sure your freezer container gives room for expanding. You need to thaw in the refrigerator, so plan ahead.

I freeze oysters and their liquid regularly.  Here we can only get good oysters at Thanksgiving  at Fresh Market.  We don't have a seafood market on this end of town.

Thanks for all of your suggestions.  I didn't think of freezing half of the oysters.  Now I just need to find a store than has fresh oysters. (don't want the canned ones)

To all you lovely ladies who answered my post, I am here to to say I finally made my oyster stew!!

I say it was almost as good as my moms but it was certainly very tasty.  I found a small container of oysters in the seafood section of Publix. strangely it was by the same company that makes the canned version (Hilton's). They were huge maybe 5 in the container but they worked.

I made enough for dinner tonight and 2 other nights.  I never have to do without again.Smiley Very Happy
