I got a good deal on 2 Nordic ware pans. One was Santa & his sleigh. The 2nd one was a village with 6 small houses.  There were no recipes for the pans included.  

 

I planned to make cakes, dust with powdered sugar & surround them with snow ball cookies.  

 

The Nordic website only showed 1 recipe for the Santa.

 

Does anyone have these items & can give me a recipe?  I should have bought them from Nordic ware.

Snowy Village Cake Recipe, courtesy of Nordic Ware:

 
2 and 1/4 cups flour
1 and 3/4 cups sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 cup plain yogurt or sour cream
1 cup butter, melted
4 eggs
1 teaspoon vanilla
1 teaspoon orange extract
 grated orange peel from 1 orange
 
Heat oven to 350 degrees.  Grease and flour Cozy Village Baking Pan; set aside (I used Baker's Joy).
 
Sift together flour, sugar, baking powder, baking soda and salt; set aside.
 
In a large bowl, combine yogurt (or sour cream), butter, eggs, vanilla and orange extract; beat on medium speed, scraping bowl often, until well blended.
 
Add dry ingredients; blend on lowest speed, scraping bowl often, until well combined.  Beat on medium speed 1 minute.  Stir in orange peel.
 
Spoon half of batter into prepared pan, filling each well 3/4 full.  Tap pan onto countertop to release air bubbles.  For best results, spread batter up to reach the top edges of each well, so it is slightly lower in the centers.  Set remaining batter aside.  Bake for 22-27 minutes, until toothpick inserted comes out clean.  Cool 10 minutes in pan.  Invert cakes onto cooling rack and cool completely.  Wash and dry out pan.  Prepare pan as previously instructed.  Repeat filling and baking procedure with remaining batter.  Decorate as desired.
 
Makes 12 little cakes.  I'm sure this would also make one large bundt cake.

There is, or at least  there was a customer service help line for their products on their website.

 

They're in Minnesota.

I have a Nordic ware pumpkin pan as well as Santa & sleigh pan.  This recipe from the Nordic ware website works for me in both pans.  It's on the website under Recipes - "Spiced Pumpkin Loaf."

 

PREP: 15 MINUTES

COOK: 40 MINUTES

SERVINGS: 8 SERVINGS

 

Ingredients

  • 1 1/ 2 cups flour
  • 1 teaspoon baking soda
  • 1/ 2 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/ 2 teaspoon ground cloves
  • 1/ 2 teaspoon ground nutmeg
  • 1/ 2 teaspoon salt
  • 3/ 4 cup sugar
  • 3/ 4 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1 cup canned pumpkin
  • 1/ 2 cup butter, melted and slightly cooled
  • 2 eggs
  • 1/ 4 cup milk
  • cinnamon sugar for dusting

Directions

Preheat oven to 350°F. Prep pan with baking spray containing flour or shortening and dust with flour. In a bowl combine flour, baking powder, soda, spices and salt, set aside. In a large bowl combine sugars, vanilla, pumpkin, eggs and butter until smooth. Add flour mixture and milk and combine all ingredients. Pour the batter into prepared pan. Tap pan on counter gently to remove bubbles. Bake until done 40-50 minutes. Loaf is done when toothpick inserted in center comes out clean. Cool cake on rack for 10 minutes, then turn out onto rack to cool completely. Dust with cinnamon sugar if desired.
