WOW!!!! was this a good recipe!! Made it for Xmas Eve dinner and it was devoured!! I didn't use all the pasta called for and made extra cheese sauce and the flavor was great. Had smoked gouda in it and that was the key to it being so yummy!!

Best Mac n' Cheese I have ate is Dadgum That's Good Smoker recipe. You can also make it in the oven. It's really yummy.

 

Four-Cheese Smoked Mac n’ Cheese

Ingredients:

1 (16 ounce) package elbow macaroni

1/4 cup butter

1/4 cup all purpose flour

3 cups milk

1 (8 ounces) cream cheese, cut into large chunks

1 teaspoon salt

1/2 teaspoon black pepper

2 cups extra sharp Cheddar cheese, shredded

2 cups Gouda cheese shredded

1 cup Parmesan cheese, shredded

Directions

1. Load the wood tray with one small handful of wood chips and preheat the smoker to 225° F.

2. Cook pasta according to package instructions. In a medium saucepan, melt butter, and whisk flour into the butter. Cook over medium heat for 2 minutes, until sauce is bubbly and thick. Whisk in milk and bring to a boil. Cook 5 minutes until thickened. Stir in cream cheese until mixture is smooth. Add salt and pepper.

3. In a large bowl, combine 1 cup Cheddar, 1 cup Gouda cheese, Parmesan cheese, pasta, and cream sauce. Spoon mixture into an 11 by 9 ½-inch aluminum roasting pan coated with nonstick cooking spray. Sprinkle top with remaining Cheddar cheese and Gouda cheese.

4. Place in smoker and cook 1 hour at 225° F, until brown, bubbly and delicious.

I love this method because you start with butter and one little chopped shallot. Then you add the dry macaroni. There’s a little more to this recipe but the idea is the starch from the macaroni actually makes the sauce it’s really very good and there’s a video with him shown doing it. All in one pan in 5 minuets.

@wagirl Thx. Glad everyone loved the mac n' cheese. I used applewood smoked gouda it's yummy.

 

@CareBears Thx for finding the recipe to share. It's not my recipe. It's Masterbuilt Smoker Mac N' Cheese recipe. I think it's about the best I have ever ate.

I finally watched the video. He sure makes it fast & easy. I will have to try it out some time. More nice recipes on that site also.

That was an interesting method, too! TY! Now I understand how you can make lazagna without first cooking the noodles!

 

I don't see why you couldn't blend Calenza's method with Nightowlz's ingredients. Seems like it would be a lighter version, since it's minus the flour w/ the bechamel.

it is one fab Mac and cheese recipe.

Just wanted to mention it you don't have a smoker, make it anyways!

It is delicious right from the pot or baked as well.

 

Smoking it is preferred to us.

 

We do have a smoker but sometimes the meats take up all the room. I just keep it warm in the oven.
