A very easy recipe is to blanch baby carrots and put in fridge. Just before dinner put carrots into a skillet with butter and some marmalade to reheat.

It sounds like you wanted a hot carrot dish, but I came across this recently and I am thinking of making it for either Thanksgiving or Christmas. (Instead of my usual glazed carrots.)
Here are the precise measurements, but you can tweak according to taste.
Classic French Carrot Salad
Shredded raw carrots (3 cups)
2 tbsp. EVOO
2 tbsp. lemon juice
2 tsp. honey
1 tsp. Dijon mustard
1/2 tsp. cumin
1/2 tsp. salt
2 tbsp. minced fresh parley
I threw in 1/2 tsp. pepper.
I buy the pre-shredded carrots. This is a new favorite lunch or supper for me!
