Green Bean Bundles

3 cans whole green beans
8 slices bacon, halved
1 c brown sugar
1/2 t garlic salt
1 c melted butter
1 t soy sauce

Drain beans and put into bundles of 10 beans. Wrap each bundle with ½ slice bacon, securing with toothpick. Place in baking dish. Cover with marinade of sugar, butter, garlic salt and soy sauce. Refrigerate overnight. Bake at 350 degrees for 30 minutes uncovered. approx. 15 servings


Note: the longer the beans, the better. Canned green beans aren't as long as I would like, but fresh beans don't work as well in this recipe.

Sweet & Sticky Hot Wings

2 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon dried garlic

1/2 teaspoon dried onion

1 teaspoon smoked paprika

2 pounds chicken wingettes and drumettes (see Note)

2 1/2 tablespoons red hot sauce, preferably Frank's Red Hot ( I USE CRYSTAL BRAND)

2 tablespoons unsalted butter, melted

2 tablespoons hot pepper jelly, melted (I MAKE MY OWN)

Preheat the oven to 500°. Line a large baking sheet with foil and spray with vegetable oil. In a bowl, mix the flour with the salt, garlic, onion and paprika. Add the chicken and toss to coat. Spread the chicken on the baking sheet in a single layer and spray with vegetable oil. Roast the chicken for 45 minutes, turning once or twice, until browned and crispy.

In a bowl, whisk the hot sauce with the butter and hot pepper jelly. Add the chicken wings to the sauce and serve.

Ruth's Chris Grand Isle Sautéed Shrimp and Mushrooms with Angel Hair Pasta

1 lb peeled shrimp
3/4 c, 1 1/2 sticks, butter
2 T Worcestershire sauce
1/2 c chicken stock
1/2 c beer
2 T seasoning
5 mushrooms, sliced and lightly dusted with flour
3 green onions, minced
1 package angel hair pasta

In a large skillet, add butter, Worcestershire, chicken stock, beer and seasoning. Bring to a light boil 1 minute.

Add shrimp cook and stir 2 minutes.

Add mushrooms and green onions. Cook 2-3 minutes.

Divide angel hair, sprinkle with grated parmesan, and spoon shrimp/mushroom sauce over pasta.

Serve with crusty French bread and mixed greens.

Seasoning
1/2 T crushed red pepper
1 dried thyme leaf 1 tablespoon
3/4 T dried rosemary leaves
1/2 T dried oregano leaves
2 1/2 T granulated garlic

Crock Pot Scalloped Potatoes with Ham

8 to 10 potatoes, peeled and sliced
2 c. cooked ham, cubed
1 onion, diced
1 c. shredded Cheddar cheese
pepper to taste
10-3/4 oz. can cream of
mushroom soup

Layer each ingredient in the order given in a slow cooker, spreading soup over top. Do not stir. Heat on low setting for 8 to 10 hours or on high setting for 5 hours. Serves 6 to 8.

Sour Cream & Chive Potato Mini Buns

Ingredients

1 cup riced or mashed potatoes, room temperature

2 tablespoons fresh chives, fine diced (I USE FREEZE DRIED)

2 cups all-purpose flour

3 teaspoons baking power

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup sour cream

1 egg

1/2 cup milk

Preparation

Preheat the oven to 425 degrees.

Begin by combining the mashed/riced potatoes and fresh chopped chives in a large bowl.

Sift the flour, baking powder, baking soda, and salt into the same bowl over the potato. Add the sour cream and cut it into the dry ingredients with two knives or a pastry cutter as you would butter for a biscuit recipe, until the dough is made up of pea-sized crumbs.

Crack the egg into a small cup and whisk with a fork. Pour it over the dry ingredients.

Begin adding the milk a little at a time while stirring the mixture with a fork until the dough comes together. Add more milk 1 tablespoon at a time if you need extra moisture to bring it together.

Turn the dough out onto a floured surface and gently knead approximately 10-15 times until smooth, no need to overdo it with extra muscle; you want it to stay light and fluffy. Roll out the dough to 3/4 inch thickness and cut it into tiny rounds approximately 1 inch across. A 1-ounce shot glass is the perfect size to cut out the dough.

Place the buns on a greased or parchment-lined baking sheet and pop them into the oven for 13 minutes. Pull them out when the tops are golden brown and transfer them to a wire rack to cool.

EASY BBQ CHICKEN

1/2 stick butter
1 (12 oz.) can Coca Cola
1 (12 oz.) bottle ketchup
1 cut up chicken or 8 to 10 chicken pieces

Melt butter in electric skillet. Place chicken pieces in skillet. Pour cola and ketchup over chicken. Cover with lid and cook on low for 30- 35 minutes. Watch closely last 5 minutes. Chicken will brown quickly.

Kind of a Mexican pulled pork barbecue, only beef and Mexican seasonings. So good, and it's nice mixed in with scrambled eggs, too, for example.

Machaca Shredded Beef

2-lb beef chuck roast
Water, to cover meat
1/2 onion, sliced
Freshly ground black pepper, to taste
2 T vegetable oil
1/2 onion, chopped
2 cloves garlic, minced
1 can Ro-Tel tomatoes and green chiles
8-oz can tomato sauce
1/2 t ground cumin
1/2 t oregano
1/2 t salt
Flour tortillas

Simmer meat, onion and black pepper in water until very tender, about 2 hours. Drain, and cool until meat is cool enough to handle. Discard bone and fat; shred meat.

Heat oil in large skillet over medium heat. Add onion and garlic; cook until onion is soft, 4-5 minutes.

In a blender, puree Ro-Tel tomatoes (including liquid), tomato sauce, spices and salt. Add to meat. Simmer until meat absorbs most of sauce, 15-20 minutes.

Serve with warm flour tortillas and sour cream, shredded cheese, shredded lettuce, diced tomato and salsa.

Cranberry Jalapeno Relish

Ingredients

1 cup water

1 cup sugar

1 (12 ounce) bags cranberries

2 fresh jalapenos ( seeded and finely chopped)

1 tablespoon fresh cilantro

1/2 teaspoon cumin

2 -3 green onions, sliced

1 tablespoon fresh lime juice

Directions

Combine water and sugar in saucepan.Bring to boil.

Add cranberries.

Return to boil; cook 10min.without stirring.

Pour into bowl and allow to cool. Add remaining ingredients & mix lightly. Refrigerate.

Cinnamon Snaps

½ C sugar

½ C shortening

½ C molasses

1 tsp soda

1 Tbsp warm water

2 ½ - 3 cups all purpose flour

1 Tbsp cinnamon

1 Tbsp ginger

ÂĽ tsp salt

Cream sugar and shortening. Add molasses. Add soda dissolved in 1 Tbsp warm water.

Add enough flour to make a stiff dough.

Bake 8-10 mins at 375 degrees. Wonderful with coffee!

These cookies snap. If you would like a softer cookie, add 1 egg into sugar mixture.

Macadamia Nut Crusted Mahi Mahi

Ingredients

5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts

1/2 cup panko

2 tablespoons all-purpose flour

1/4 cup butter, melted

Vegetable oil, for brushing foil

4 (6 to 8-ounce) mahi mahi fillets (I USE THE FROZEN INDIVIDUAL FILLETS FROM SAMS)

Kosher salt and pepper

2 tablespoons coconut milk

Directions

Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.

Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.

Remove from the oven and allow to stand 10 minutes before serving.
