You are all so very welcome! Carol1229 posted some of the best recipes. Many of them were made with health-conscious choices as well....., so you can search her name, if interested in more of her recipes!
ReikiLady - YES a cup of Mayo does sound like a lot, but I use it sparingly and sometimes only use 1/2 of it on 6-8 breasts. I don't overdo in most recipes, so once-in-a-while can be a treat. There are many people who don't think that way, but oh well! ![]()
Carol1229 did mention she found this recipe on Pinterest, or she may have adapted it from there. I saw a similar recipe on Pinterest, but it was just a tad different. I trusted Carol with her recipe changes, if she made any, so I did it like she wrote it.
Nightowlz - YES...I found her on Taste of Home, also. She mentioned in the past that she frequents that site and some others. She has a TON of recipes on TOH site, and I've been going through them this past week a little at a time. I wonder why she left us....
She was such a joy to have here! I wonder, also, why Ties That Bind left a few years ago after posting so many recipes daily...hope she's doing OK!!
happygal - I believe it's safe to cook with Mayo. I also think it's the Mayo that helps make the chicken tender?
You have to be more careful with homemade versus store bought, from what I have read. (I also always use Best Foods / Hellman's)

Made this last night and cooked in NuWave...yum! I didn't measure ingred. Put some mayo, seasonings and cheese in a glass, stirred, and spread on chicken. Thank you for recipe!

I am so bummed out! I made this tonight, and the chicken came out of the oven sitting in a very deep amount of fat. All the flavor was in the fat, too, not in the chicken. I could see the melted cheese floating in it. What did I do wrong? I followed the recipe exactly. I was hoping this could be an easy, last minute dinner for us , but I don't think I would try it again.

Hmm...I'm so sorry that you didn't have a good experience with this recipe. It's always worked well for me. I have made it when there were some juices in the bottom of the pan, but there has ALWAYS been the browned coating on the top. I do make sure I trim any extra fat off the boneless breasts, so I'm not sure if that is the issue, or what? I also make sure that I pat the chicken breasts dry with paper towels before putting them in the pan or adding the coating. I usually have made this ahead of time and they sit in the fridge for a few hours before I take them out 30 minutes prior to baking in the oven.
I hope others help figure out what may have gone wrong, so you will feel confident about making it again... I'm sorry!

I made this last week, very delicious, will definitely make again. I followed the recipe exactly (I always do the first time around), next time I will use just a tad bit less seasoned salt, I use very little salt in my cooking. Otherwise, perfect!
