I lived my grandmother's house keeper's Mushroom Meatloaf!  It is The best I have ever had!

 

Mushroom Meatloaf or Burger Bundles

350 degrees

 

2 lbs ground round (or I lb ground round and one lb ground pork, not sausage, ground.).

2 pieces of well toasted bread, crumbled

2 stalks celery, chopped

1 med onion, chopped

1 egg

Milk to moisten

2 cans Campbell’s mushroom soup with 1 ½ can water, mixed

Mix all EXCEPT SOUP AND WATER.

Form into a loaf in a 9 x 13 casserole.

Bake for 45 min to 1 hr, and spoon off all fat. 

Add mushroom soup and water.

Bake for an additional 1 –1 ½ hr, basting frequently until gravy thickens.

 

For Bundles, Patty out the size of hamburgers.

                      Lightly brown in frying pan, spoon off grease.

                      Add soup and water.

                      Lightly simmer and baste until gravy thickens.

@ninjawife I make my meatloaf the same way as I make meatballs.  Ground meat, Italian breadcrumbs, eggs, chopped garlic, salt & pepper, dried parsley & basil and grated cheese -- either parm or Romano.  Top it with ketchup.

@ninjawife  I make meatloaf the same way my mother did.

Ground beef, finely chopped onion, breadcrumbs, egg, milk

and Bell's seasoning. Before baking, I pour an 8 oz. can of Hunt's

tomato sauce on top.

DH isn't a fan of green pepper so I keep my meatloaf pretty basic. He eats it plain too, but I use some keto friendly SF ketchup with it.

Sometimes I add chopped (already cooked bacon) in with chopped onions, bellpeppers, breadcrumbs, worcestershire sauce, Jalapeno ketchup, raw egg and mix thoroughly.

I use Ann Landers recipe, which includes an envelope of Lipton onion soup mix.

Meatloaf

1-1/2 lbs. ground beef

1/2 cup ketchup

1/3 cup V-8 juice

1/2 tsp. salt and pepper

1/8 tsp. red pepper (cayenne) not hot just for taste

2 eggs, beaten

3/4 cup Italian bread crumbs

1/4 cup minced onions

2 tsp. mustard

Topping--

1/4 cup ketchup

1/2 tsp. mustard

2 tsp. brown sugar

Mix meatloaf ingredients together put in 9X5- inch loaf pan. Mix topping ingredients

together and spread over top. Bake at 350* until meat is done.

@ninjawife IVE PUT CARROTS,AND CHOPPED CELERY ALONG WITH ONIN AND GREEN PEPPER.I COULD EAT ML EVERYNIGHT!
