I am watching Ina Garten's new show on Food Network and Erin French is her guest.  Erin is making meatloaf and she is putting shredded carrots in.  Ina is so suprised she is adding carrots saying no one does that.  I DO THAT ALL THE TIME.  

 

What do you put in your meatloaf that makes it unusual or special?

It's not particularly special, but I add chopped green peppers.

I make it with ground venison and add a touch of ginger.  Ms. French looks to be a marvelous cook, but I don't like the addition of 1/2" bread cubes.  Guess I'm just used to my seasoned panko crumbs.  My topping replaces the dijon mustard with Worcestershire sauce.

@ninjawife I put in two hard boiled eggs. My mom use to do that.

Someone I worked with added carrots, onion,celery, green peppers and zucchini. I never could understand how it held together with all those moist veggies in it.

I make a Mexican style meatloaf, with taco seasonings. Chili powder, cumin, onions, garlic, peppers, cilantro, etc. It's delish hot out of the oven nestled on a bed of rice, or pasta. Even atop a salad. Then it's great on tortillas the next day. It's my thing.

@ninjawife I used to put shredded carrots in my meatloaves to add veggies. My son at that time wouldn't eat any at all, but he liked my meatloaf. I told him years later he got his veggies but didn't know it at the time!
