hi Mary Beth. I have been trying to get recipe of yours. You ere making it in a copper pot with Eric T. It was with pork cops and canned corn. Would you please put on your recipe list?

Hi @Leonodom. I didn't see the cooking show. I do have one of Mary Beth's cookbooks though and it does have a recipe called pork chops and creamed corn. I thought I would share, in case it is what you were interested in.
Pork Chops and Creamed Corn
4 boneless pork chops 3-4 large potatoes, boiled or baked
1 small oinion, chopped salt and pepper to taste
1 large can of creamed corn 1 Tbsp butter
1/4 cup milk
Melt butter in skillet; brown pork chops in butter with the onion. Add the creamed corn and the milk into the skillet and let in simmer for 30 minutes. Serve with potatoes.

I found this recipe on one of the community pages or somewhere. I love it but I hate water chestnuts so i don't use them.
Smothered Pork Chops
Mary Beth Roe
2 cans cream style corn
1 bag stove top stuffing
5 oz. can water chestnuts
1/4 cup of chopped onions
8 boneless pork chops
1 stick of butter
in a bowl, mix the corn, stuffing, water chestnuts and onions. set aside. Melt the stick of butter in a 9" x 13" pan. Place the pork chops on the butter. Spoon the stuffing mixture over the pork chops. Cover tightly with foil and bake 1 1/2 hours at 300 degrees. Remove foil and bake another hour.

Have you made it?
Was wondering about cooking them for 2 1/2 total hours! Seems like a really LONG time. Maybe it is an old recipe b4 they relaxed the pork rules?
If you have made this....did you really cook it that long?

Yes. I have made it several times but as I said, I do not use the water chestnuts. It ends being 2 1/2 hours. In Mary Beth's picture her pork chops were on the thicker side. You could probably check it after the 1 1/2 hours and see how much longer you would need. If your pork chops arent as thick. It is also being cooked at 300 degrees. More of a low and slow. You will love it. It is delicious!! i have creamed corn lovers in my house also. I make a baked creamed corn for Thanksgiving. I come from a pa dutch family and this is down my alley.
