I find that a dinner (meatloaf), is one that I have the most variations of. Does anyone else have a dinner that has a lot of variations too? Sloppy Joes could be another.
How about you?

For me it is Pasta. You can make it a million different ways. Plus, all the different shapes. It is endless.

I know it is early yet, but in Texas when you wake up on a Sat. morning in the 50's and you need to take a couple of dishes to your sons for a family dinner you get a bit carried away with the cool weather.
Anyway I put first layer chili with beans, then topped with tater tots and sliced up frozen breaded onion rings into bit size pieces, then a layer of montery jack cheese, then poured one can of Manwich on that. For my last layer I took a Betty Crocker Cheesy Hash brown side dish and put on top and baked per hash brown instructions.
We were falling out of our chairs trying to get more before anyone else could. My son had made pot roast and all the fixings but the chili disappeared first!!
The onion ring bites mixed in with tater tots and the hash browns were so good.

Chicken. We eat it a lot, and I'm always trying to find different ways to cook it!

Chicken. Chicken + whatever usually winds up bring pretty good.
Last week I had almost nothing in the house for dinner except a package of chicken thighs, some condiments, and an untouched 6-pack of Pumpkin Cider. I knew you could make chicken with beer, so I Googled for recipes and found one that called for chicken, beer, stone ground mustard, soy sauce, and honey. I swapped out the soy sauce for some ginger and the beer for the pumpkin cider and marinaded my chicken for two hours, then simmered the chicken in the remaining liquid and served it over brown rice. It was good enough that I'd make it again.

Tator Tot Casseroles have many variations. I just downloaded a free cookbook on my Kindle that has 40 Tator Tot recipes. Probably won't be making any of them. They all seem to call for a pound and a half of ground beef and two cans of condened soup.

QualityGal, I just love meatloaf! I even order it in restaurants, I love it so much. I still haven't found my perfect recipe, though. If you have any good, really flavorful yet EASY recipes for a bad cook like me, please pass them along!

I, too, made a meat loaf over the weekend- tonite I am having a meatloaf pattymelt..slice the meatloaf, rye bread, sharp cheddar, caramelized onions, grill the sndwich in garlic butter..yum...
