Anyone have an easy homemade recipe for Mac and Cheese that is bubbly and perhaps has some crunch texture on the top.  Cooking "ain't my thing" but I am tired of the box version.  I might have to eat alone since Hubby does not want any.  But heck I really really would like some for ME.

Bonnielu, I'm not a great cook anymore, but I don't think there's anything wrong with the box version (I like Kraft or Country Kitchen), but I add 1/2 cup milk, 1 Tbsp butter, 2 slices of American or cheddar cheese (or any cheese you like) after adding their cheese sauce (not the dry cheese). I like mac & cheese really creamy so I never bake it because it always dries out - I don't need the crunch on top, but you could try bread crumbs or crushed Ritz crackers or crushed potato chips. Obviously I'm not a gourmet cook!

Have you tried Stouffers frozen mac and cheese? Very tastey and very easy.

I made this quick and easy Mac and Cheese for ds and ddil while babysitting my dgd yesterday since it was National Mac and Cheese day. It was delicious! It came out so "pretty" ddil posted a picture of it on her Instagram account. *(This is my basic recipe for Mac and Cheese.)

 

Quick Mac and Cheese

1 box elbow macaroni(I use Mueller's)

1 log sharp cheddar cheese(grated)

3/4 of a large loaf of Velveeta(cut in small cubes)

1 stick butter(room temperature)

1 egg(beaten)

about 2 cups whole milk (more as needed)

salt and pepper to taste(I use seasoned salt)

Paprika for color

Note:

*cheeses melt easier if room temperature

 

Cook mac al dente, about 9 mins. Drain and return to pot. Add butter and cheeses to hot macaroni.  Mix till cheeses melt. Add egg and mix well. Add milk until creamy adding more if needed. Sprinkle top with paprika for color. Pour in greased baking dish or tin and bake at 350 degrees until bubbly and brown on top, about 35 to 40 minutes.

I second the Stouffers - and they come in various sizes - enough for one or a family size.

Barefoot Contessa's Lobster Mac and Cheese is the best - it's super easy and comes out perfect every time. 

 

You can easily elminate lobster from the recipe.

Kraft Mac & Cheese? Might want to think this again: Eight of the nine Kraft products tested in the study contained phthalates.

Don't over bake.

 

The  Oh! My! Mac and Cheese

 Doubled, it will fit a 9 x 13.  One recipe does a

9 x 9.

Reheats like a dream!  I loved it so, I took it home in a baggie!!!

 

4 C hot small macaroni noodles (8 oz uncooked)

2 C (8 oz) shredded sharp cheddar cheese

1 C cottage cheese

3/4 C sour cream

1/2 C milk 

2 Tbsp grated fresh onion

1  1/2 tsp butter, melted

1/2 tsp salt

1/4 tsp pepper

1 large egg, lightly beaten

Cooking Spray

 

Topping

1/4 C dry bread crumbs

1 Tbsp butter, melted

1/2 tsp paprika (optional for extra flavor)

2 C shredded sharp cheese

 

Preheat oven to 350 degrees.

Combine first 10 ingredients, stir well.

Pour into sprayed casserole.

Spread 2 cups shredded cheddar cheese over top of casserole.

Mix butter, breadcrumbs, and paprika

Spread on top of casserole

Cover with foil.

Bake 350 for 45 minutes.

Uncover and bake 10 minutes or until bread crumbs are browned.

 

Six one cup servings

My recipe for mac 'n cheese is very similar to @ECBG except that I grate a smidgen of nutmeg and add some dry mustard in my version,
