Apple Cranberry Relish

Ingredients:

  • 1 package (12 ounces) STOUFFER'S Harvest Apples, defrosted*
  • 1 can (16 ounces) whole berry cranberry sauce

Directions:

PLACE Harvest Apples in food processor or blender; cover. Process until coarsely chopped.

COMBINE apples and cranberry sauce in medium bowl; cover. Refrigerate for at least 1 hour.

 

Great for Summer Cook-outs!

Maybe a stretch to fall under B ... but it is a berry. Smiley Happy

 

I love fresh RaspBERRIES and we eat them a lot. I stopped making freezer jam when the boys went off to college. But now that I'm retired and Jack is taking more time off, it might be time to get back to making a small qty of raspberry freezer jam.

 

This makes for great cake filling between layers, great filling/swirl for creme cakes/muffins/cheesecake, on top of really good icecream, to make a raspberry shake, on top of a choc brownie and of coarse fabulous on a toasted English Muffin. (to name just a few ways I eat this up).

 

Easy RaspBERRY Freezer Jam - From The Café Sucre Farine

Ingredients
2 cups prepared fruit buy 4 ½ pint cartons (2 pints) OR 2 12-ounce packages of frozen raspBERRIES
4 cups sugar measured into separate bowl
1 3-ounce pouch CERTO Liquid Fruit Pectin
2 tablespoons fresh lemon juice

 

Instructions
1. Wash glass jars or plastic containers and lids with hot soapy water. Rinse well then dry thoroughly. (I like to run them through the dishwasher.)
2. Thaw raspberries and crush them thoroughly (I use a potato masher for this). Measure exactly 2 cups of the crushed berries into a large bowl. Stir in sugar until thoroughly combined. Scrape sides of the bowl to incorporate sugar crystals along the edges.


Use either of these methods:
1. Cover bowl with plastic wrap or a plate and let stand at room temperature for 6-8 hours.
OR
1. Place the bowl in the microwave and cook on high power for 3 minutes then stir well again. Take a little taste. If there are still some sugar crystals, give the mixture another 1-2 minutes in the microwave. 
To finish:
1. Mix pectin and lemon juice. Add to raspberry mixture; stir for 3 minutes.
2. Fill containers to within ½ inch of tops. Wipe off top edges of containers and cover with lids. Let stand at room temperature for 24 hours.
3. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in the refrigerator before using.

CORN-ON-THE-COBB Salad

 

1 bag mixed Italian greens, torn (or favorite mix)

2 ears CORN-ON-THE-COBB, grilled, cooled

  (kernels removed)

10-12 Cherry Tomatoes, halved

1/3 cup Zesty Italian Dressing

1/4 cup shredded Parmesan Cheese

 

In a large bowl, toss greens with CORN and tomatoes.  Add dressing; toss lightly.  Sprinkle with cheese.  Serves 4-6.

Spicy DILL Dip - From Spend With Pennies

Ingredients

1 cup 2% Greek Yogurt
1 cup light sour cream
1 large jalapeño
½ tablespoon dried DILL
½ tablespoon dried parsley
1 teaspoon sea salt
1 teaspoon onion powder or dried onion
1 teaspoon garlic powder
1 teaspoon chopped fresh chives


Instructions

In a medium bowl combine greek yogurt and sour cream.


Mince jalapeno, removing the stem. Include all of the seeds for a spicy dip, half for a lightly zesty dip, and no seeds at all for a mild fresh dill dip.


Stir in dried herbs (dill and parsley), salt, onion powder, garlic powder, and chives and cover with plastic wrap.


Place in the fridge for a minimum of one hour, or simply make it the day before for an extra flavorful dip! Serve with all your favorite dippers and dig in!


Notes
This dip can be made with as little as 1 hour chill time, but for even more flavor try making this dip the night before, letting it chill while you sleep. The spices will mingle with the yogurt and sour cream and it's just plain glorious!

 

Garnish with fresh dill if you like.


Craving an extra spicy dip? Let some hot sauce or cayenne pepper in on the fun! Season to taste with any extras of your choosing.

Elephant Ears

from Eating on a Dime

 

Ingredients

  • 2 cups Flour
  • ½ tsp salt
  • ½ tsp Baking Powder
  • 1 cup warm water
  • Oil for Frying
  • 2 Tbsp sugar
  • 2 tsp Cinnamon

Instructions

  • In a medium size mixing bowl, combine the flour, salt and baking powder. Slowly stir in the warm water until a dough forms. (you may not need all the water).
  • Let the dough sit for 5 minutes.
  • Roll the dough out slightly and cut it into 6 pieces.
  • Roll out each piece into a ½ inch thick circles.
  • Heat 3 inches of the oil in a deep pot. Fry the dough circles in the oil until the dough is golden brown and poofs up slight. Then flip the dough to fry the other side.
  • Set the fried dough on a plate lined with paper towels.
  • Stir together the cinnamon and sugar together in a small bowl. Sprinkle the cinnamon sugar mixture onto the dough while still warm.
  • Serve immediately while warm and enjoy!

I ask the folks in the meat dept to butterfly my flank steak to make it easier/quicker to make pinwheels. Yes, I could do it....but the meat dept folks are way quicker than I am. 

 

STEAK PINWHEEL - From Grillin With Dad

INGREDIENTS
2 lbs FLANK steak
4 tbsp BBQ all purpose seasoning
12 Provolone cheese slices
2 cups Spinach
8 oz Sun-dried tomatoes in oil


INSTRUCTIONS
Slowly and carefully slice the steak horizontally across most of it. Next open it up and make sure it lays flat.


Place a sheet of plastic wrap on top of the steak and pound the meat evenly throughout until it is about 1/4 inch in thickness. Slice off uneven ends.


Season with your choice of BBQ all purpose seasoning.


Start layering with slices of provolone cheese, followed by spinach leaves, stems removed, and sun-dried tomatoes. Drizzle some of the oil from the tomato jar for extra flavor.


To roll the steak pinwheel, start from the shorter side and start rolling down. Make sure to keep everything tightly in place as you roll.


Tie butcher twine around the roll about 2 inches apart from one another. Season the outside with more BBQ rub and punch skewers through the roll next to the butchers twine for extra support.

Set to griddle on high heat at 400 degrees.


Place the skewered steak pinwheels on the flat top and grill 5 minutes per side. For medium rare you want the steak to reach 130 internal temp, if you are going for a more cooked piece, medium should be removed around 140 degrees.


Rest for 10 minutes before serving.

Ground Beef Fajitas

1 lb ground beef
1 T vegetable oil
1 med yellow onion*
1 red pepper*
1 green pepper*
1 yellow pepper*
1 Tbsp fajita seasoning from package.

For serving: tortillas, avocado/guacamole, salsa, sour cream, shredded cheese, jalapeños, hot sauce, shredded cheese, jalapeños, hot sauce, etc.

  • Heat a large skillet over medium heat. Add the ground beef and break apart, cooking until browned. Add in all spices and stir well to coat. Continue cooking for another 2-3 minutes.
  • Remove the beef from the skillet and set aside. Add in vegetable oil, onion and bell peppers. Sauté over medium heat until vegetables are charred and tender (8-10 minutes).
    Add beef back in and stir well, then remove from heat.
  • Serve with tortillas and desired toppings.

*I use the frozen Roasted peppers and onions!

 

  • You can also use this recipe to make some seriously good rice bowls!

               Hamburger Pizza

  1 lb. ground beef                      1 8oz. can tomato sauce

   2 Tblsp finely chopped onion   dried oregano

   1 cup shredded mozzarella      1 tsp yellow mustard

   1 tsp. Worcestershire sauce

 

    Preheat oven to 350 degrees

 

  *  Place ground beef into an 8" or 9" pie pan.

  *  To ground beef, mix in mustard and Worcestershire

  *   Spread mixture to evenly cover pan, stopping 1/2"

      away from rim, pressing mixture with fork.

  *  Sprinkle chopped onion or 1-2 tsp.dried minced onion

     over ground beef mixture

  *  Spread tomato sauce over the onion & ground beef

  *  Sprinkle oregano over tomato sauce

  *  Top with shredded mozzarella    

 

    Bake for 30 minutes at 350 degrees. Let it set for about 5 min. before slicing into wedges. I usually remove some of the

fat and water with my turkey baster. Use a pie server to lift out

sliced wedges.    (My kids have loved this since the 70's)

 

  This is good served with potatoes or rice and a vegetable.

Seven-Layer Tostadas



Ingredients:
1 can (16 oz.) refried pinto beans
1 1/2 cups guacamole
1 cup light sour cream
1/2 tsp your favorite Taco Seasoning
1 cup finely grated cheese (Four Cheese Mexican Blend) or your favorite.
1 cup chopped tomatoes
1/2 cup thinly sliced green onions
1/2 cup sliced black olives
6-8 flour tortillas, 6 or 8 inch inch size
olive oil for greasing baking sheet, about 1 tsp.

Instructions:

Place a baking sheet inside the oven or toaster oven and let it get hot while you preheat oven to 450F/230C, about 10 minutes.  Carefully remove baking sheet, drizzle a tiny bit of olive oil on it and spread around with a paper towel, and put flour tortillas on the baking sheet.  Toast tortillas in the oven until they're crisp and barely starting to brown, turning several times.  This will take less than 5 minutes so watch them carefully.

 

While tortillas are crisping, put the refried beans in a bowl, stir to break them apart, and microwave 2-3 minutes, or until they're hot. 

Stir the Taco Seasoning Mix into the sour cream. 

Chop the onions, slice green onions, and slice the olives, grate some cheese.


Put crisped tortilla shell on a plate and top with:
--a thin layer of refried beans (1-2 tablespoons)
--a thin layer of guacamole (1-2 tablespoons)
--a thin layer of seasoned sour cream (1-2 tablespoons)
--several generous pinches of finely grated low-fat cheese
--chopped tomatoes
--thinly sliced green onions
--sliced olives

Serve right away, with salsa or hot sauce if desired. 

You can keep the topping ingredients in the fridge and crisp more tortillas later to use any leftovers.
