@house_cat, your tamale pie recipe is almost the chili that I grew up on, and it's delicious! Heart

Ground beef, onion, tomato soup, chili powder and dark red kidney beans. Served with cornbread. Comfort food that my family loves.

 

Mom also used that same recipe (sans chili powder & kidney beans)  w/ elbow or shell macaroni. So good!

UPSIDE Down Baked Potatoes*

 

3 tablespoons butter, melted

3 tablespoons grated Parmesan cheese

2 medium potatoes

 

Preheat oven to 400 degrees.  Pour melted butter in baking dish.  Sprinkle Parmesan cheese over it.  Cut potatoes in half lengthwise; put cut side down over butter and Parmesan cheese.  Bake 30-35 minutes or until tender.

Fried Potatoes

 

2-3 lbs. red potatoes, sliced thin

1 VIDALIA ONION, sliced thin

2-3 garlic cloves, chopped

1/2 stick butter, slice or cube

1 teaspoon Larry's Seasoned Salt

1 can of beer

 

Place all ingredients in a cast-iron pan on open fire or cooktop.  Cook on medium to medium-high heat flipping potatoes on occasion.  Cook until potatoes are soft; about 30-40 minutes*.

 

*Can also be baked in oven at 350 degrees.

Old fashioned goodness. Our Aunt used to make these back in the day, and now my sister does.

 

Black Bottoms
 
Base:
1/4 C cocoa 
1 C Sugar 
1 & 1/2 C. Flour
1/2 tsp salt
I tsp baking soda
1 C water
1/3 C oil
1 T vinegar
1 tsp vanilla
 
Topping:
8 oz. cream cheese, softened
1 egg
1/3 C sugar
1 tsp vanilla
1/8 tsp salt
6 oz chocolate chips 
 
Directions:
Step 1 Preheat the oven to 350. Grease a 13X9 baking pan.
Step 2 Beat cream cheese, egg, sugar, vanilla and 1/8 salt in a medium bowl until light and fluffy. Stir in chocolate chips; set aside. 
Step 3 Mix together flour, sugar, cocoa, baking soda, and salt in a large bowl. Make a well in the center; add water, oil, vinegar, and vanilla. Stir together until well blended. 
Step 4 Pour batter into prepared pan, spreading evenly. Place dollops of topping uniformly over batterOptional, not necessary: Swirl gently w/ knife into batter.
Step 5 Bake until golden and set, 25 to 30 minutes. Testing w/ toothpick is fine, but try to do it in a place w/ no choc. chips.
Step 6 Cool and cut into squares

Waldorf Salad

Ingredients

  • 3 sweet apples, cored and chopped (peeled if you prefer)
  • 1 cup thinly sliced celery
  • 1/2 cup toasted chopped walnutes
  • 1/2 cup red grapes, washed and halved

Dressing

  • 1/2 cup mayonnaise or plain yogurt
  • 1 tablespoon white sugar
  • 1 teaspoon lemon juice
  • salt to taste

Instructions

 
  • Place the salad ingredients in a medium sized bowl.
  • Whisk together the salad dressing ingredients until smooth, then pour over the salad ingredients. Stir until the apple mixture is coated in the dressing.
  • Refrigerate until ready to serve.

BTW, that's just how I like fried potatoes....w/ onion and Lawry's, but never tried them with beer. Thank you!

Xavier Chicken Soup

  • 1/2 cup flour
  • 3 Tablespoons heavy cream
  • 3 Tablespoons butter
  • ½ cup Parmesan cheese, grated
  • 1/2 lb ground chicken breasts 
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper 
  • 2 eggs, slightly beaten
  • 1 tablespoon chopped parsley
  • 10 cups chicken stock
  • 1 cup Swiss cheese, shredded

INSTRUCTIONS

  1. In a medium bowl, combine the flour, cream, butter, Parmesan cheese, ground chicken, salt, pepper, and eggs into a soft dough.Using two spoons, form quenelles (balls) of the chicken mixture to make quarter-sized dumplings. Bring the chicken stock up to a simmer and all of the dumplings and boil until they are tender and cooked through, 8-10 minutes. 
  2. Once all the dumpling are cooked and in the chicken stock, ladle the soup into oven safe bowls (or drinking mugs) and garnish each soup vessel with equal amounts of Swiss cheese. 
  3. Place under a broiler and melt cheese until it bubbles and is golden brown. Serve immediately.

Tomato-Basil Pasta Salad

 

2 1/2 cups uncooked shell macaroni

1 bundle fresh asparagus spears, trimmed, cut

1 pint grape tomatoes, cut in half

1/4 cup chopped YELLOW BELL PEPPER

1 (8 oz) bottle tomato-basil salad dressing

 

Boil pasta 7 minutes in plenty of water.  Add asparagus and boil 3 minutes more; drain.  Rinse with cold water; drain.  Pour mixture into large salad bowl with tomatoes and YELLOW BELL PEPPER.  Add dressing; toss gently.

Serves 6-10.
