Check out Paula Deen's recipe for Tuna Burgers...pretty good (or I can post). I used to fix tuna casserole but it makes a lot for two. We like fish so I fix that as well as different shrimp recipes that are easy with rice or linguine. Soup and sandwiches....Clam Chowder....or...go to nearby Fish Fry! 😁
Maybe we should start a thread for Meatless Lenten Recipes.

I'll just add a couple of recipes on this thread as subject already says...Lent Recipes. First recipe may have come from this board....very good....easy. Second recipe...not sure...out of some magazine...have not tried it.
Baked Shrimp Scampi
2 Tablespoons white wine*
2 Tablespoons lemon juice*
1/2 cup Panko
1/4 cup butter, melted
1-2 lbs. medium shrimp, uncooked, peeled & deveined
2 Tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes, optional
salt and pepper
2 Tablespoons chopped parsley
Preheat oven to 425. Put white wine and lemon juice in 9x13" baking dish, set aside. In small bowl, combine shrimp, olive oil, garlic and red pepper flakes, if using. Season with salt and pepper. Add shrimp in single layer to baking dish. Sprinkle with Panko and melted butter mixture. Place in oven and bake until bubbly and golden, 10-12 minutes. If desired, garnish with parsley.
* I double these for more sauce and served over linguine.
Could also serve with rice.
Sweet and Sour Shrimp
1 lb. Linguine or Spaghetti
1 onion, halved and sliced
4 cups broccoli flowerets
1 1/2 lbs. medium shrimp, cleaned
1 bottle sweet and sour sauce (such as Kikkoman)
1/2 teaspoon salt
1/4 teaspoon pepper
Cook pasta according to package directions, drain well.
Heat two tablespoons oil in large skillet over med-hi heat. Add onions and cook 2 minutes. Add broccoli and continue to cook, stirring, an additional 5 minutes. Add shrimp; season salt and pepper. Cook, stirring, 3-5 minutes or until shrimp is no longer pink. Add sweet and sour sauce with linguine. Toss with tongs so ingredients are well-blended. Remove from heat and serve immediately.

Tuna Burgers.....Paula Deen
2 (6 oz) cans solid white tuna, drained (or 1 large can)
1/2 cup breadcrumbs
2 large eggs, lightly beaten
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1 tablespoon chopped pimento, optional
1 tablespoon lemon juice
1 1/2 teaspoons horseradish
1 cloves garlic, minced
1/4 teaspoon pepper
1 tablespoon olive oil
Preheat oven to 350. In large bowl, combine tuna, bread crumbs and eggs; stir lightly. Add onion, celery, pimento (if using), lemon juice, horseradish, garlic and pepper; mix together well. Form mixture into 4 patties. Heat oil in skillet over medium heat and cook patties, covered, until golden brown..about 5 minutes. Carefully flip the patties and cook another 5 minutes. Finish baking in oven until golden brown...about 5-10 minutes.
