Lemon Pudding Cake

Lemon Pudding Cake

 

 

1 stick butter + 2 tbsps.

1 cup flour + 2 tbsps.

½ cup chopped nuts (pecans or black walnuts)

1 tsp. almond extract

1 tsp. vanilla

Lemon zest

 

Mix with dough cutter and press on bottom of buttered baking dish.

(11 ¾ x 7 ½ x 1 ¾)

Bake @ 375 degrees for 15 minutes. Cool.

 

 

 

2  8 oz. pkg. cream cheese

1 – 1 ½ cups Cool Whip (from 12 oz. container)

1 cup 10x powdered sugar

 

Cream together and add to crust mixture.

 

 

2 pkgs. lemon instant pudding/pie filling

3 - 3 1/2 cups milk

 

Beat together until thick, and put this mixture over the cream cheese mixture.

Spread remaining Cool Whip on top.

 

 

Chocolate option: Instead of the lemon flavor, substitue instant chocolate pudding/pie filling . For the crust, omit lemon zest and add in instant coffee or instant espresso, pinch of sea salt.

Thank you! Copied and stored, then went to All Recipes, and looked up desserts with pudding in them. I do a bread that my husband just loves, pumpkin that has pudding in it.  Don't do it often since sugar is in it too. He has to be careful of that. But I had been wanting to look up recipes with pudding in them. So I did that. Check that off my want to do list.

This really is not that sweet, since there is no sugar in the crust. But, if one did want it sweeter, you could up the 10x sugar.

 

Also, I've done the chocolate version already, (which is what I will also do this weekend). I meant to add the pinch of salt to the crust, and the espresso powder to the chocolate pudding mixture. But now I am thinking that may not dissolve, so maybe a shot of the espresso would work better to enhance the chocolate flavor.
