I made this lemon butter chicken recipe tonight.
Oh, my! It was soooooo good!

YIELD: 8 SERVINGS
PREP TIME: 10 MINUTES
COOK TIME: 40 MINUTES
TOTAL INGREDIENTS:
I used boneless breasts and added red potatoes.
I would say it's more like 4 servings, rather than 8, but other than that, I followed the recipe exactly.
I highly recommend it.

If you like Bourbon Chicken like they sell in a lot of Malls this is yummy.
Cajun Chef's Bourbon Chicken
2 lbs boneless chicken wings cut into bite sized chunks
1-2 T olive oil
1 garlic clove, crushed
1/4 t ginger
3/4 t crushed red pepper flakes
1/4 c apple juice
1/3 c light brown sugar
2 T ketchup
1 T cider vinegar
1/2 c water
1/3 c soy sauce
Heat oil in large skillet.
Add chicken pieces & cook until lightly browned. Remove Chicken.
Add remaining ingredients, heating over medium heat until well mixed & dissolved.
Add chicken & bring to a hard boil. Reduce heat & simmer for 20 mins.
Serve with Fried Rice

wow--what a beautiful plate you made! I would use breasts too;not a fan of thighs.
