Super cool!

I have done something similar to make muffins.

Also, a Thanksgiving pie is a favorite at my house - I use a large pie plate - layer the stuffing to make a crust, top with, turkey, a little gravy, chopped up leftover veggies, and cover all with a good layer of mashed potatoes. Bake till heated through and browned on top. Serve pieces of the "pie" with cranberry sauce and gravy on the side.

Oh my, that is brilliant!

These recipes are starting to sound better than the actual thanksgiving meal. I may heed to break with protocol one year and just make these instead!

@GenXmuse I was actually toying with the idea of starting a thread about "leftovers . . . ok, now what do i do?" . . . there have been so many great ideas sprinkled throughout many threads so maybe I'll try and capture some of those ideas and we can build from there . . . Smiley Happy

LOL when I read the title I thought it was using leftover waffles in stuffing/dressing. That sounds good too

Don't feel bad, @jaxs mom if you misunderstood anything...

I thought that we were supposed to make waffles out of the rest of the leftovers too, like the mashed potatoes! LOL!!

Now, that would be interesting, blending everything together and making it into a waffle.

I was thinking a turkey-stuffing-cranberry-mashed potato-type waffle, covered with gravy! Smiley LOL

I saw this recipe on Diners, Drive Ins & Dives and you probably can make waffles as well.

Turkey Balls
Recipe courtesy of Adam Lucks, owner of Comet Cafe, Milwaukee, WI
Total Time: 55 min Prep: 15 min Inactive: 15 min Cook: 25 min   Yield: 2 dozen

Ingredients

1 pre-cooked turkey breast (recommended: Ruford)
1/4 tablespoon olive oil, plus more for sweating vegetables
Salt and freshly ground black pepper
1 cup diced celery
1 cup diced onion
1/4 cup minced fresh sage leaves
4 sprigs fresh thyme, leaves chopped
15 cups cubed bread
4 cups chicken stock
8 cups cheesy mashed potatoes
Oil, for deep-frying

Directions

Special equipment: a deep-fryer
Preheat the oven to 400 degrees F.
Coat the turkey with the olive oil, season with salt and pepper and put into a roasting pan. Transfer to the oven and roast until warmed through. Let cool. Combine the celery, onion, sage leave and thyme in a stockpot and sweat in a little olive oil. Add the bread and the stock and cook for 10 minutes. Remove from the heat and cool. Transfer to a large bowl.
Heat the oil in a deep-fryer.
Dice the turkey and add, along with the mashed potatoes, to the stuffing bowl. Form the mixture into medium-sized balls and fry in the deep-fryer until golden brown. Drain on paper towels and serve on a serving platter.
