I too use leftover mashed potatoes in my cakes. I sometimes use panko crumbs, mashed canellini beans or even potato chips. Especially, when a bag is almost empty and there are lots of little pieces of chips on the bottom of the bag.

I always put sweet relish in my salmon or tuna cakes.
