LOOKING FOR SALMON CAKE RECIPE

Just a simple request from my fellow posters.  Many, many years ago I remember making salmon cakes but because it has been such a long time ago my memory fails me.  I will be buying a few cans of salmon and would love to have a quick and easy recipe so I can enjoy those salmon cakes again.  Thanks in advance for your help.

I make salmon cakes all of the time.

 

1 can salmon

crumbs from 4 saltines

1 egg, beaten

1/3 C chopped onion.

 

I discard the skin and round bones (the small bones are rich in calcium) from the salmon, and squeese the moisture out.

 

In a bowl I place the salmon, crumbs from 4 saltines, chopped onion,   beaten egg, and about 2 Tbsp milk to moisten.

 

Mix.

 

Form into patties and brown on medium heat for about 5 minutes in a sprayed skillet turning once.  Smiley Happy

I use leftover crumbled cornbread in them and it's really good!

I made salmon cakes for dinner tonight

 

To a can of salmon, I add some mayo to make it moist.  I add a little mustard, fresh parsley, salt, pepper and sautéed chopped onions and a little Italian flavored bread crumbs.

 

I divide into four portions and roll in additional bread crumbs and brown them in butter.

 

Sometimes, I add dill or sautéed celery. It depends on my mood.

 

I used to add eggs instead of the mayo, but found I like the mayo better.  I prefer sauteed onions and celery, but some people put the veggies in raw.  I don't like to bite into raw onion.

 

As long as you have a filler, like some crumbs and and either mayo or eggs as a binder, you can pretty much spice them up anyway you like.

I make them all the time, can of red salmon, italian flavored bread crumbs, egg,pepper and some old bay seasoning, brown in oil of your choice.

When you lose some one you L~O~V~E, that Memory of them, becomes a TREASURE.

Using cornbread instead of crackers or breadcrumbs sounds really good.

14.75 oz can red salmon

2 tbsp melted butter

1/2 cup finely-crumbled saltines 

1 tsp minced garlic

2 beaten eggs

1 tbsp dried parsley

1 tsp Dijon mustard

1/4 tsp dried dill weed

1 tsp Old Bay seasoning

3 tbsp shortening or oil

 

Drain salmon.  I next remove the circular spinal bones (some cooks just mix them in with the fish).  Flake the fish.  Mix butter, cracker crumbs, dill weed, Old Bay, parsley, garlic, eggs, mustard, and salmon.  Shape into patties and refrigerate for 1 hour.

 

Heat shortening/oil over medium heat.  Fry until browned.

 

Yummy Creamy Lemon Herb Sauce:

1/2 cup mayonnaise

2 1/2 tbsp lemon juice

1 tsp dried parsley

1 tsp dried thyme

1/2 tsp salt

 

Mix all ingredients and season to taste with pepper.  Cover and refrigerate 30 minutes before serving.

Thanks for asking for recipes for salmon cakes (we called them patties when I was growing up) because this is something my Mom would make and were delicious.  However, she never had a written recipe for them and she died when I was a senior in high school, so I was out of luck.  My sister has her old recipe book but as I said this wasn't in it and we both miss them.  I can now copy it and send to my sister for us to enjoy again.  My Mom died in 1964 so you see it's been a long time for us.

I am so sorry on the loss of your dear mother.  My mother was a fantastic cook, never wrote down anything, it was all in her head.  I memorized many of the things she cooked and wrote it all down which I kept in my recipe book along with many of my favorites.  When I moved many years ago my daughter was helping cleaning out everything in my kitchen and threw away that very treasured book of recipes, I still haven't forgiven her. Woman Sad

I use leftover mashed potatoes as the binder in my salmon patties.
