Hi everyone...this is another recipe that you can switch out the veggies (not the kale) if you prefer. Adding, cukes, cherry tomatoes, etc., is not unheard of. That said, this is what I typically do:

Liquid mix in a bowl:

1/2 cup fresh squeezed oj (if you can...if not, a good kind not from concentrate will do)

3 tsp fresh squeezed lemon juice

2 tsp soy sauce

1 clove garlic smashed into a paste

4 tsp Extra Virgin Olive Oil

Whisk above items together

1 bunch of kale - take out the stems and cut finely

2-3 avocados chopped

1 red pepper chopped

1/2 of a red onion chopped

Add kale, avocados, peppers, onion and liquid mix to a bowl. Mix together. With kale I have found that using yours hands and "massaging" it works really well. Add coarse pepper and sea salt to taste. Cover and let ingredients combine for at least an hour. This is a salad that will hold up for days and tastes better the longer it sits. And it is good for you!
