Fiesta Ranch Dip
1 package Hidden Valley Fiesta Dip
1 tub sour cream
1 can Ro-tel tomatoes with chilis...original
Drain tomatoes (important step), mix with the fiesta dip mix and sour cream. Easy and delicious. Serve with taco chips.

Edamole: A Mexican Edamame Dip

This easy Mexican dip is a great alternative to Guacamole for anyone watching their weight or for those who don't like avocadoes.
Ingredients
water
12 ounces of shelled frozen edamame beans
½ cup cilantro (leaf coriander) leaves
¼ cup lime juice
¼ cup chopped onion
2 cloves of garlic, minced
1 tbsp minced jalapeno pepper (optional)
½ tsp salt
¼ tsp ground cumin
¼ tsp ground coriander seed
a pinch of sugar
1 tbsp olive oil
Instructions
1. Bring two cups of water to a boil. Plop in the beans. Bring the pot back up to a boil over high heat. Reduce heat to low and simmer for 3 minutes. Turn off heat and cover the pot. Let it sit until the beans are soft, 7-9 minutes.
Drain the beans.
2. Put all of the remaining ingredients except for the olive oil into a blender. Add ¼ cup of water. Blend until very smooth. Add the olive oil and blend until it is well-combined.

This is always popular no matter where I take it.I get my pepper jelly at trader joes. The thing I do differently is put softened cream cheese block into a dish and pour pepper jelly over it. I also like the pepper jelly with grilled meat.

Hi terrier & Ladies,
While I've not made this one, I do make a caramelized onion dip (I think I got it out of a book called Skinny Dips) and it is FANTASTIC! I am not even an onion dip girl, but it's so fresh and delicious.

Hi pupcakes - I've been making this for years, super simple and people STILL love it.
Hot Taco dip
8 oz block of cream cheese
1 jar Salsa (I use thick and chunky - medium)
8 oz block of pepper jack cheese shredded (or if you can find it pre-shredded, easier yet)
Black olives (optional)
Layer cream cheese, salsa, cheese then olives, cover with plastic wrap, microwave for 5 minutes, and serve with tortilla chips. Careful removing the plastic wrap, it gets really hot! I use a quiche dish, fits perfectly. Enjoy!
