This is similar to a pulled pork sandwich. The recipe was developed by a local chef and cookbook author, Mary Jane Miller. It was inspired by a sandwich made by the Minnesota Turkey Growers A'ssn. I have not made this yet. It makes quite a bit and I have not needed that much. I will probably make it around the 4th of July for family picnics.

Juicy Turkey Sandwiches

2 turkey thighs ( about 2 lbs.)
1 turkey breast half (about 2-1/4 lbs.)
1 ( 10.75 oz.) can cream of mushroom soup
2 bay leaves
1 tsp. fresh thyme leaves or 1/4 tsp. dry thyme leaves
2 cups shredded white cheddar cheese
12 hamburger buns

Use a paper towel to grip and pull off and discard the skin from the turkey pieces.
Place thighs in slow cooker; arrange the breast on top.
Spoon undiluted mushroom soup over turkey. Place bay leaves on top and cover. Cook on LOW 8-12 hours or on HIGH 4-5 hours.
Discard the bay leaves; remove turkey to large bowl. With gloved hands or 2 forks, remove bones and pull meat into bite-size shreds.
Return turkey to juices in pot along with thyme and shredded cheese. Stir gently until cheese melts into the sauce.
Taste and season with salt and pepper.
Spoon onto buns to serve.
