This recipe was given to me by the mother of one of my students some time ago. She prepared a couple batches of this when she entertained the class and staff at her home. It is pretty spectacular as it comes out of the oven...like a huge popover! It is served with various preserves as toppings. I think fresh or frozen fruit is good, too, and also whipped cream.
Kropsu-Finnish Baked Pancake
2 eggs, well beaten
1 cup flour
2 cups milk
1/2 tsp. salt
1/4 cup butter
Melt butter in a 9x12x2" aluminum pan in the oven.
Sift flour with the salt.
Beat the eggs well; add the milk
Whisk in flour lightly.
Add melted butter and pour the batter into the HOT pan.
Bake 40 minutes at 400 degrees.
Serve several preserves and butter with pieces of the pancake. Fresh fruit and warm syrups are also very good. A dollop of whipped cream on top goes well.
