This is a very timely thread. I just made three small containers of it on Saturday and tucked them away in the freezer. Pesto freezes very well. I can take a spoon or two out of the freezer and pop the rest back in, or use the whole thing.  It's very easy if you have a food processor, but I've seen it done with an immersion blender, too.

Take a look at the RANA brand of refrigerated pesto.

 

RANA's refrigerated Alfredo sauce has become my favorite, so the pesto might be excellent, too.  We don't eat pesto, so I can't vouch for it, but look at the reviews it gets on this site.......

pesto is really simple and easy to make.

if you dont want to make it homemade, i recommend members mark in sams club. it is a beautiful bright green.

Fresh is best but Costco or Buitoni is acceptable when you can't do fresh.

...and if you want a great appetizer or light meal, Spread some pesto on a small Boboli, top with some shrimp (I use them right out of the freezer!) then sprinkle with some shaved or shredded parmesan, bake just till shrimp is pink, and cut into wedges..yum

 

Its one of those things that is better than the sum of its parts!

Oh my goodness!  Did I EVER!  Sam's Member's Mark is absolutely wonderful!!!!!

All of the food we get there is resturant quality!
