@KaySD I use it regularly- I add seasonings and use it to 'dust' seafood to create that beautiful golden sear.

I haven't used Wondra in years. I do use King Arthur's Signature Secrets Culinary Thickener and really like it. Unfortunately, it is out of stock right now--just at the time that I need it and they have free shipping.

I used to be a big fan of Wondra and used it all the time, but not so much since everytime I checked they added more batches to the recall list. I emailed the nice folks at King Arthur asking if they had anything like Wondra or instant flour, which is what Wondra is, they replied that they did not have anything like it, but found a recipe to make my own. I have not made any of the recipes that I normally use Wondra for, so I have not had a chance to try it yet.
Homemade Wondra Instant Flour Recipe (makes 1 cup, but can be reduced or increased as needed for your recipe, or keep in an airtight container for when you need it)
1 Cup All Purpose Flour
1/2 teaspoon Corn Starch
For each Cup of All Purpose Flour, combine Flour and Corn Starch, sift three times, then remove three Tablespoons. This will aerate the flour
I also discovered that Wondra is a low protein flour and will probably try it with All Purpose Flour and Cake Flour (which has a lower protein amount than All Purpose and may produce better result) and a blend of the two.
Hope this helps, until you can find it again, I have not seen it at any of our stores for quite sometime.

wondra is a staple in my cupboard.
i use it for thickening soups, chili, and gravies/sauces.
