@sarahpanda SO sorry to hear about your hubby. You will be on my heart.
And I used to like a lime jello with cottage cheese in it. I can't remember what else was in it, but I do remember that. I guess you use dry curd or very well drained cottage cheese.
I hope you find some good things he will enjoy.

This is similar to some of the others that were suggested. My mom was famous for her 'Pink Salad Dessert'. We always called it that and ususally had it with dinner and not dessert. She made this for every holiday, cookout, etc. It was always referred to as pink even when it was a different color, LOL
Mix together the following. It's better after it's had a chance to sit for a few hours in the fridge.
1 can crushed pineapple, drained well
1 pint cottage cheese
3 oz jello, any flavor (strawberry or orange were her favorites)
10 oz cool whip

@sarahpanda .... I am sorry to hear your DH's condition is terminal. Here are a few recipes...even the "Knox Blox" one from the box...super easy.
Knox Blox (aka Finger Jello)
4 envelopes Knox Unflavored Gelatin
3 pkgs. (4 serving size) fruit flavor gelatin ...Jello
4 cups boiling water
Mix unflavored gelatin with flavored gelatin. Add boiling water and stir until dissolved. Pour into 9x13" pan and chill until firm. Cut into squares.
Rainbow Gelatin Cubes *
(This takes time but worth it.)
4 pkgs. (3 oz.) assorted flavored gelatin (Jello)
6 pkgs. unflavored gelatin, divided (Knox)
5 and 3/4 cups boiling water, divided
1 can (14 oz.) sweetened condensed milk
1/4 cup cold water
Combine one package flavored gelatin and one envelope unflavored gelatin. Stir in 1 cup boiling water until dissolved. Pour into a 9x13" pan coated with non-stick cooking spray; refrigerate until almost set but not firm, about 20 minutes.
Combine condensed milk and 1 cup boiling water. In another bowl sprinkle two envelopes unflavored gelatin over the cold water; let stand 1 minute. Stir in 3/4 cup boiling water. Add to the milk mixture. Spoon 1 1/4 cups of this creamy gelatin mixture over the first gelatin layer in pan. Refrigerate until set but not firm, about 25 minutes.
Repeat from beginning of recipe twice, altering flavored gelatin with creamy gelatin layers. Chill each layer until set but not firm before adding another layer. After final layer refrigerate at least an hour. Cut into squares.
* This may require more time than you have...sorry I can't make it for you and deliver! 🙂
Cranberry Gelatin Salad
1 (16 oz) can Jellied Cranberry Sauce
1 (16.5 oz) can pitted dark sweet cherries, drained
1 (10 1/2 oz) can crushed pineapple with juice
1 (6 oz) pkg. cherry gelatin
2 cups boiling water
1 cup chopped pecans (optional)
In saucepan over low heat, melt cranberry sauce. Cut cherries into pieces and add to the melted sauce. Stir in pineapple with its juice. Remove mixture from heat.
In bowl pour boiling water over gelatin stirring until dissolved. Add gelatin mixture to cranberry mixture; stir well. Stir in nuts if using. Pour into a 9x13" pan and chill until set.

Haven't read the other replies so this may have already been suggested. Anyway, a can of fruit cocktail added to red or green with or without a dab of cool whip on top.

There was also a green jello salad that appeared to have cottage cheese in it. I often saw the salad at covered dish picnics.

Old concoction from years ago: Mix the dry jello powder into a large container of cottage cheese, a small container of cool whip, and mix in a bunch of fruit. It was usually crushed pineapple, fresh strawberries, and sometimes bananas and mandarin oranges or canned apricots. You can use any flavor jello to match (or not) the fruits you use. I used to like it mainly with strawberry jello or peach jello (if you could find it). I also made it with sugar free jello and it was fine. Served this back in the day at brunches Haven't made it in years.

I no longer eat jello but I used to have a few favorites. Sea foam jello was one. It had lime jello, cream cheese, and pears. Another one was always on our Thanksgiving table - cherry jello, canned crushed pineapple, a container of Indian Trail frozen cranberry-orange relish, and chopped nuts. For a more plain combination - lime jello, pears, maraschino cherries or orange jello, shredded carrots and mandarin oranges.
