@jlkz ....That's it !  Pineapple !  It seemed like I remembered some kind of fruit that wouldn't do well in jello and  I recall now, it being pineapple !  Thank you

I still have a book from Jello with numerous recipes.  Maybe you can find one.  Just a thin free book sent out after you filled out a form and mailed in some box tops or something.

I only remember things I made for the kids with blue jello and fish and something with candy worms.

I am sure you will get many great ideas on here.  Good luck.

When my kids were little I made a lot of finger jello...cubes...great for snacking...easy.  I will post a recipe later for a finger jello done in layers...very good.  Off to check my jello recipes.....hope your DH gets better.

Don't know if this would interest you.  I eat sugar free jello everyday.  I like mine plain tho.

5 cup jello salad:

1 cup of pineapple (crushed, tid bits or chunks)

1 cup of mandarin oranges, 1 cup sour cream, 1 cup coconut, 1 cup minature marshmallows.  Fluff and serve.

@rms1954  My Mom used to call this ambrosia. It's delicious! She'd make it a couple of hours ahead of time to let the flavors blend together. YUMMY!
