Several of the tips suggested: If meat is extra thick be sure to cover pan if you wanted the center of the meat fully cooked. My brother loved the way that Mom cooked t -bone steak for him= she would sear the steak first and then include gravy and onions and put a lid on the skillet. Brother always requested this for his birthday dinner.

Both regions have recipes that they've grown up with and have developed an expertise in perfecting the foods they know.
It's not that they're different, they just perfect regional favorites.
I have cookbooks for all regions across the US, I'm fascinated with regional recipes.

BTW: Texas, as well as many other regions, are known for the best chili you can find, GA not so much.
