4 lbs turkey wings ( 3-4 medium sized turkey wings) also can make from a turkey carcass & leftover turkey.
3 c H2o
7 c turkey stock or chicken broth
3 lg onions, corsely chopped
1 c rutabaga, or turnip; peeled and diced
1 c celery, chopped
1 c cabbage; finely chopped
1/4 c parsley leaves; chopped
1/4 c pearl barley
4 - 5 carrots, 1/8 " slices
2 stalks celery; 1/8" slices
1/4 c elbow macaroni
1/4 tsp. dried marjoram leaves
1/4 tsp dried thyme leaves
1/2 tsp salt or to taste
1/2 tsp black pepper or to taste
1 1/2 frozen corn kernels
1 15 oz can tomatoes (including juice) broken up with a spoon
1 16 oz can of cannellini beans or white beans; drained
Combine turkey wings ( or turkey carcase ) water, chicken broth, onions, rutabaga, chopped celery, cabbage, parsley, and barley in a 6 qt stock pot and bring to a boil oveot r high heat. Lowe heat and simmer for 1 1/2 hr covered until turkey wings are tender.
Remove turkey wings from pot and set aside. When cool, remove meat and cut into bite sized pieces. Using slotted spoon. skim off and discard all fat from soup surface. Add carrots, celery, macaroni, marjoram, thyme, salt, and pepper to pot. Bring mixture to simmer and cook for 45 min's.
Stir in corn, tomatoes, reserved turkey meat, and beans and simmer for 25 min's or until carrots are tender.
